Krusteaz Gluten Free Giveaway

The weather is getting colder and the days are getting shorter. What better way to spend time with family than in the kitchen baking? After all, baking is a universal language and nothing says “Welcome to the neighborhood” like freshly baked muffins and “I love you, Mom,” like a warm stack of pancakes!

I’ve partnered with Krusteaz, makers of premium baking mixes, to create a recipe for their “Say It With Krusteaz” campaign. I’ve baked with Krusteaz products before and I am a big fan.

Over the weekend I got married (!!!!). The day before the wedding my sister and got manicures, dropped off welcome bags to the hotels, put together our wedding favors and baked muffins for my friends and relatives who would be spending the day with us getting ready for the wedding. I mean what better way to say thank you to my bridesmaids and keep everyone happy – and fed – than with a warm, fresh out of the oven, gluten free blueberry lemon muffins? Simple mixes with quality ingredients make any day really special.

This recipe is simple and delicious. Your friends or guests will be so impressed by the flavors and will have no idea how easy it was to make! I can tell you all my bridesmaids, and my picky grandmother, enjoyed the blueberry muffins we fed them Sunday morning.

The recipe is SUPER easy to make. Simply follow the recipe on the back of the box and add 1 tablespoon of grated lemon peel. This simple step with add a delicious lemon and fresh flavor to the muffins. My friends and family couldn’t believe that they were (1) gluten free or (2) made from a mix!! If you haven’t tried Krusteaz gluten free products then you are missing out. And this is your chance to win some gluten free mixes for yourself to enjoy!

The Giveaway prize pack includes:

  • Two boxes of the following mixes: Gluten Free Blueberry Muffin Mix, Gluten Free Buttermilk Pancake Mix and Gluten Free Double Chocolate Brownie Mix

Enjoy Life Foods launches new line of gluten free baking mixes

The baking mixes have finally arrived! I’ve been waiting for this day for months! I have been a big fan of Enjoy Life products for as long as I’ve been gluten free (since 2009), and I am always excited when they come out with new products; I know I won’t be disappointed. So when Enjoy Life Foods told me they would be launching their newest line of making mixes I couldn’t wait to share with you all. And now I finally can!

The new line of baking mixes includes: brownie mix, pizza crust, all purpose flour, muffin mix, and pancake + waffle mix.

As always, the new Baking Mixes are certified gluten-free, and free-from the eight most common allergens That means:

They are also certified non-GMO, kosher, halal, and vegan! Enjoy Life baking mixes are delicious, and they’re the first and only gluten-free baking mix line to include probiotics and plant-based protein. Made from ancient grains and free from the top eight allergens, they make baking simple and fun for everyone! Who knew baking could feel so good?

Each Baking Mixes includes a shelf-stable probiotic for immune health! The best part about the probiotic is it only activates under the correct conditions – when it’s exposed to water and heat – so your body gets maximum benefits once it reaches your small intestine.

They’ve included ancient grains like teff, buckwheat, millet, and quinoa flours so there are 5 grams of protein per serving, to give you that extra oomph and bridge the gap between meals! This way, you don’t have to snack, but if you want to sneak a Snickerdoodle, I totally get it.

The mixes are incredibly EASY to make. All you need is water and oil to make the delicious treats, so it’s simple and cost effective! The mixes are a fresh slate for you to get creative! You can add anything you want, like fresh fruit, a sprinkle of brown sugar, or even my favorite, Enjoy Life Foods Mini Chocolate Chips! You’re free to customize to the fullest! I’m thinking Chocolate Banana Muffins or Berry Jar Muffins. I can’t decide.

Last night I tried the Brownie Mix. Jeremy did not like it and I think has to do with the mix of flours used. Although these are not the best brownies I’ve had, they were still pretty good, and have way less sugar than your average mix (14 grams vs. 18-20 grams). I found them to be not as sweet, obviously, but I would love to get used to that.

I used the All Purpose Flour to make gluten free pancakes for breakfast over the weekend. I used this recipe with a few variations (no flax seeds, almond milk)

The Baking Mixes are available now to order online, and they have an awesome promotion going. If you order one Baking Mix, you get a free bag of Mini Chocolate Chips! If you order two, you get a bag of our Mini Chips and Dark Chocolate Morsels. And if you order three mixes, you get a bag of all three of our baking chocolates! Each mix retails for $8.49 and will soon be available in retail locations nationwide. You can also purchase the mixes on Amazon(free shipping for Prime members).

Gluten Free Garden Lites Veggie Muffins Review

Screen Shot 2015-01-19 at 12.28.09 PM

Garden Lites began in 2008 to answer the need for healthier vegetable based frozen foods. Soufflés, muffins, veggie bites, bakes, and veggie sliders make up the line of Garden Lites.

Start with the freshest, most delectable vegetables, then whip them into perfect shape using a blend of secret ingredients, years of culinary experience, and a little bit of love, as “mom” used to say. The finished product: Garden Lites line of vegetarian soufflés, bakes, and muffins. Minimally processed and maximally delicious, each bite is filled with nutritious real flavors.

Blueberry Oat Muffins

All of Garden Lites products are gluten free and are produced on dedicates gluten free lines to prevent cross contamination. Garden Lites are also peanut- and tree nut free, and processed in a nut free facility. All Garden Lites are dairy free except for the Pizza Souffle, Veggie Chili & Cornbread, Loaded Potato Souffle, and Veggies & Cheese.  To prevent cross-contamination, all dairy containing items are manufactured on a separate dedicated line.

Each of their thirteen types of souffles have two full servings of vegetables, are made with all natural ingredients, are low in calories, and they are loaded with protein and fiber. The same can be said for the veggie muffins, with five grams of fiber and four grams of protein per muffin. The muffins are made from a combination of veggies, egg whites, and other ingredients. Even the plastic wrap is BPA free.

Eating well does not mean sacrificing taste and quality.

I am a big fan of Garden Lites Veggie Muffins. I love the chocolate and Carrot Berry.

Muffin flavors:

  • Blueberry Oat
  • Banana Chocolate Chip
  • Chocolate
  • Carrot Berry
  • Golden Corn

Carrot Berry Muffin

My favorite is the Carrot Berry Muffin. The muffin is dense and the texture is slightly different than you would expect for a ‘muffin’. I liked the flavor combination of carrots and fresh berries. The muffins are small, but surprisingly filling. I felt like I was eating something indulgent but in reality it is actually so much healthier than most processed muffins.

How to cook: If Defrosted, Heat Veggie Muffin on high for approximately 10 seconds. If Frozen, Heat Veggie Muffin on high for approximately 35 seconds.Quick and Easy! I find defrosting the muffins first, then heating them, give them a slightly better taste and texture.

Garden Lites is currently in the process of becoming GMO-free. The majority of their ingredients are already GMO-free, and they are working to source reputable vendors for the remaining ingredients.

Garden Lites are sold at retailers across the country including, Target, Whole Foods, Food Emporium, Dagostino, Stop & Shop, Roche Brothers, and at numerous health food stores. For a complete list of retail locations, click here. Garden Lites has a $1 off coupon available for download so you can save money off your next purchase!

On Wednesday, January 14, 2015, Garden Lites made their first appearance on QVC and unveiled their NEW Veggie Siders, a QVC exclusive. Available in two flavors, Roasted Vegetable and Spinach, these delicious single-serving side dishes remain true to Garden Lites’ commitment to always have vegetables as the first and main ingredient in all of its products.

Both flavors of Veggie Siders have only 100 calories and are gluten free, vegetarian, Kosher parve and a great source of whole grains. The Roasted Vegetable variety features a vibrant blend of veggies including broccoli, spinach, carrot, zucchini, corn, red peppers and onions in combination with brown rice and eggs, to keep you fuller longer. The Spinach variety offers a combination of tender spinach leaves, brown rice and just a touch of nutmeg. Garden Lites Veggie Siders come frozen in an assortment pack that includes seventeen (17) of each flavor for a total of thirty-four (34) individual servings.

Amazing Foods for Health Gluten Free High Protein Mixes

Screen Shot 2014-11-02 at 3.09.41 PM

I was SO excited to try this line of gluten free! Amazing Foods for Health mixes are fantastic! You can enjoy great taste while also knowing you are getting real, whole foods that are high in protein and nutrient dense. Amazing Foods for Health provides us with great tasting products that don’t use junk ingredients.

All products are gluten free, dairy free, nut free, and non-GMO. They don’t contain artificial colors or flavors.

Amazing Foods for Health products are easy to prepare. I love that the instructions call for quality ingredients, such as coconut oil, and when they call for eggs, they provide alternative for people who don’t— or can’t— eat eggs.

Oatmeal Raisin Cookies

The oatmeal raisin cookies were my favorite, with great taste and texture! I made a batch as soon as the mixes arrived last week and Jeremy and I devoured them. At only 45 calories each, you can easily have one or two. I liked that there weren’t too many raisins but just enough to satisfy my sweet tooth.

I don’t feel guilty indulging in these goodies.

On weekends I love making pancakes. The high protein pancake mix combines protein with a hint of stevia to make great tasting pancakes with zero sugar and only 41 calories per serving (mix only; calorie cunt goes up when you add the egg and milk). I don’t like pancake mixes that are loaded with sugar, so I am a big fan of this mix. The pancakes turn out fluffy and delicious.

The Banana Chocolate Chip Muffins (also vegan) are a wonderful, guilt-free combination of chocolate and banana all wrapped up in a muffin, creating a great start to your morning. These muffins are full of flavor. I made a batch and froze the rest. After defrosting, the muffins still have great taste.

An exceptional pizza crust with this quick mix that merely involves mixing a few basic ingredients and patting the dough into the pan.  No need to wait for the dough to rise. Just pop patted dough into oven and bake, and you will have a homemade pizza dinner in about half an hour.

Krusteaz Gluten Free Mixes, Pumpkin Swirl Brownies & Giveaway

Screen Shot 2014-11-06 at 8.06.57 PM

Partnering with awesome brands is one of the fun perks of having a blog, and I was super excited when Krusteaz reached out to me about participating in a Gluten Free Bake-Off!

This fall Krusteaz, maker of premium baking, pancake and waffle mixes, introduced its first line of gluten free products. Available at most grocery chains nationwide, each of the four new baking mixes deliver big on flavor without the gluten. From moist and flavorful pancakes and blueberry muffins to subtly sweet cornbread and delectable brownies, there are mouthwatering options for everyone at the table!

Screen Shot 2014-11-06 at 8.50.34 PM

All the mixes require the addition of water, oil, and/or eggs. The Blueberry Muffin mix comes with a can of real wild blueberries; it is the ONLY gluten free blueberry mix on the market like this.

All Krusteaz products bear the Whole Grains Council’s Whole Grain Stamp, which guarantees a half of serving of whole grains per serving. The mixes are made with a combination of whole grain sorghum flour, whole grain millet flour, and/or brown rice flour.

The Bake-Off requires us to create a recipe using one of the mixes. I had a few recipe ideas in mind but ultimately chose one made with one featuring of my favorite fall foods: pumpkin.  I love anything with pumpkin; pumpkin lattes, pumpkin granola, pumpkin pancakes, pumpkin bread, pumpkin hummus, pumpkin chili, roasted pumpkin, pumpkin ice cream….I think you get the idea. So I decided to make Pumpkin Swirl Brownies, and I do have to say, this is one of the best recipes I’ve come up with yet!

These brownies were delicious! I have to say these are some of the best gluten-free brownies I’ve had. I have tried many gluten free boxed brownie mixes over the past few years, and some really don’t quite cut it. These tasted like the real deal. Jeremy even raved about them. The only downside is the amount of sugar. These brownies are sweet— and addicting— and personally I would like to see these made with a little less sugar.

Pumpkin Swirl Brownies

Servings: 20
Prep Time: 15 minutes
Cook Time: 50-55 minutes

For the Brownies:

For the Pumpkin Swirl:

  • ¼ cup cream cheese
  • 1 cup canned pumpkin
  • 2 tablespoons almond or soy milk
  • 2 tablespoons coconut sugar
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon nutmeg

  1. Preheat oven to 325F. Lightly grease a 11×7-inch baking pan.
  2. Stir together all the ingredients for the brownies, except for the coconut flakes
  3. In a separate bowl, stir together all the ingredients for the pumpkin swirl
  4. Pour 2/3 of the brownie mix into the greased baking pan and spread evenly
  5. Pour the entire pumpkin swirl mix over the brownie mix and spread evenly
  6. Top with the remaining brownie mix and spread easily
  7. Sprinkle with coconut flakes.
  8. Bake for 50 minutes or until a toothpick placed in the center comes out clean
  9. Cool completely in pan before cutting.

The advantage of mixes is that most of the prep work is already done for you. All the dry ingredients are already mixed together in a box. And all you need to do is add in a few wet ingredients and stir. The disadvantage is you can’t control what’s already in the mix. With 20 grams of sugar per serving, I wish there was just a little less sugar.

Krusteaz Gluten Free mixes retail for around $4.49, which is in the middle-lower price range for gluten free mixes, and can be found at grocery stores throughout the country or on

Now it’s time for the giveaway!! Krusteaz is also going to give one lucky reader the chance to win a Krusteaz Prize Pack that includes a Krusteaz Tote, two packages each of the gluten free mixes, and a Krusteaz spatula! To enter, simply click on the rafflecopter below.

  1. Preheat oven to 400F. Lightly grease pan or line muffin pan with paper or silicon baking cups.
  2. Drain and rinse blueberries in cold water; set aside.
  3. Stir together water, purée, oil, eggs and muffin mix until well combined.
  4. Gently fold drained blueberries into the batter.
  5. Fill muffin cups 2/3 full.
  6. Top with sliced or chopped almonds.

The Great Low Carb Bread Company Gluten Free & Paleo Product Review

Screen Shot 2014-10-23 at 11.33.47 AM

I often find myself thinking, Why can’t there be gluten free low carb bread products that tastes great and doesn’t have the consistency of a sponge? The Great Low Carb Bread Company has found the answer. The Great Low Carb Bread Company makes great tasting low carb, gluten free breads, bagels and buns that won’t raise your blood sugar.

All the gluten free low carb buns, muffins, bagels, and granola are also paleo and have no additives, preservatives, or anything else but wholesome ingredients.

I recently had the chance to try the line of gluten free items— they also have a line of non-gluten free low carb bread products for anyone in your family who is interested.

The first thing I tried was the granola. Available in 3 flavors, Cinnamon, Coconut, Maple, all three are made with all natural and non-GMO ingredients. The granola is also sugar free, though it does have 3 grams of sugar from stevia. For those of you who like sweet granola, this is not for you. But if you are like me and don’t like sugary granola then you are sure to like this!

This morning I had the bagel for breakfast. The bagel was thin, which has to do with there being no yeast in it. With that said, this is the ONLY bagel I have ever found without yeast; something else I cannot eat. So looks aside, I toasted the bagel, added my lactose free, dairy free, gluten free Go Veggie cream cheese and enjoyed a bagel for the first time in years!!

This bagel had a slightly different taste and texture than ‘’normal’’ bagels, but I really liked it nonetheless.

I also like that Low Carb Bread products are grain free. The bagel is made with organic coconut flour, almond flour, water, egg whites, organic golden flaxseed meal, organic unrefined virgin coconut oil, baking soda, sea salt, and stevia.

The six muffin flavors include: lemon, coconut, chocolate, cinnamon, pumpkin, and vanilla.

You can purchase all Great Low Carb Bread Company products online!

If you are looking for tasty, nutrient dense, grain free, gluten free muffins, bagels, granola or buns then look no further! I highly recommend you check out all the great products the Great Low Carb Bread Company has to offer.

Product Review: Breads from Anna Gluten Free Mixes

Last October I attended the Healthy Villi’s Gluten Free Expo and tried for the first time, Breads from Anna. I remember loving the breads; the taste, texture, consistency were all incredible. But since then I have not been able to find Breads from Anna in any of my local grocery stores.

So when I received a box of six mixes last week, I was beyond thrilled. I was so excited that I got baking right away!

Anna’s first baking mix, the Original Gluten, Soy, Nut, and Rice Free Bread Mix, was introduced in 2004. As her business began to grow she found that many people with Celiac Disease also had other food allergies they needed to manage. In response, Anna has developed a complete line of 12 gluten and allergen free baking mixes that are sold on-line and in hundreds of stores and bakeries all over the world.

Breads from Anna line of gluten free items include 12 mixes:

  • Original Bread Mix
  • Corn and Dairy Free Bread Mix
  • Class Herb Bread Mix
  • Yeast Free Bread Mix
  • Banana Bread Mix
  • Pumpkin Bread Mix
  • Pie Crust Mix
  • Apple Pancake and Muffin Mix
  • Cranberry Pancake and Muffin Mix
  • Maple Pancake and Muffin Mix
  • Pizza Crust Mix
  • Black Bean Brownie Mix

All products are all natural, Non-GMO, Kosher certified, gluten free, soy free, rice free, and nut free. Many of the mixes are also free of corn, dairy, potato, and yeast. None of Anna’s products are made with refined sugars, rice flours, fillers, additives or preservatives.

Screen Shot 2014-04-12 at 10.19.53 AM

Anna sent me the following mixes to try and review: Pumpkin Bread, Banana Bread, Yeast Free bread, Black Bean Brownie, Pie Crust, and Maple Pancake and Muffin. All were super easy to make.

The bread mixes were by far my favorite. Each one was flavorful and had amazing texture. The loaves rose beautifully without yeast— all three bread mixes I made were yeast free.

The pumpkin bread was a deliciously spiced bread with a moist and smooth texture. It was not grainy or crumbly like many gluten free bread mixes I’ve tried. My dad also loved the pumpkin bread and didn’t even realize at first that it was gluten free!

The banana bread was also a hit; Jeremy really liked this one. It was also moist and had a great banana flavor.

The yeast free bread was also a winner. I don’t have a bread maker but it came out just fine cooked in my oven. The taste was amazing and made excellent sandwich bread. I also cut a few thicker slices to make French toast and it held up quite nicely to the egg and milk mixture.

The black bean brownies were a big disappointment. I did not like them at all. I was surprised because the breads were excellent. It is optional to add chocolate chips or walnuts, something I did not do and wish I had. Perhaps it would have tasted better with the add-ins.

The maple pancake and muffin mix made great pancakes but not so great muffins. The flavor of the muffins was not the issue. The consistency of the muffins was similar to a non-fluffy pancake, if you can imagine that. And the mix is just not sweet enough to be muffins, and this is coming from someone who doesn’t eat a lot of sugar!

But, as pancakes the un-sweetness was perfect. The pancakes were not very fluffy, but rather they were pretty flat. The texture was ok but the taste was still pretty good.

Anna provides recipes online for each of her mix for those of you who like to experiment. For example the pumpkin bread mix can be used to make the pumpkin bread recipe provided on the box, or muffins, zucchini bread or carrot cake. The black bean brownie mix can also be used to make ice cream sandwich cookies or peanut butter cookies. You get the picture.

Anna’s mixes are sold throughout the United States and online at Anna’s or Amazon. To find a location nearest you click here. Prices range from $5.99-$9.49 (most items are $7.49).

Product Review: Simple Mills Almond Flour Muffin Mixes {Gluten Free, Grain Free, Dairy Free, Soy Free}

I’m excited to share with you today a new product that I was recently introduced to and absolutely love!Screen shot 2014-01-29 at 3.04.06 PM

Simple Mills makes gluten free and grain-free almond flour muffin mixes. I almost never make muffins from mixes, but Simple Mills mixes are easy to prepare and taste delicious and fresh, making for a convenient breakfast on busy mornings.IMG_5957

These mixes are:

–       Grain Free
–       Gluten Free
–       Dairy Free
–       GMO-Free
–       Soy Free
–       Low Glycemic
–       Paleo friendly
–       And use quality ingredients

Simple Mills founder, Kaitlin, created the company in an effort to make allergy-friendly eating nutritious, fast, and easy—and delicious.  She believes that simple is the best –using only natural, simple, and nutrient-rich ingredients, and never any preservatives. Just look at the ingredients for the banana muffins:Screen shot 2014-01-29 at 3.05.10 PM

There’s nothing you can’t pronounce, or have to guess what is it, and there is zero refined sugar!

Unlike traditional gluten free flours, almond flour has zero carbohydrates, a neutral blood sugar impact, and high nutrition (protein, monounsaturated fats, Vitamin E, magnesium, and protein!). Each muffin has only 130 calories, 6 or 7 grams of sugar, and 4 grams of protein per serving. It also makes very rich, moist products, which is a welcome change from most gluten free mixes!Screen shot 2014-01-29 at 3.04.39 PM

Simple Mills muffin mixes come in three varieties: Banana, Chocolate, and Pumpkin.Screen shot 2014-01-29 at 2.27.57 PM

Each of the mixes made light, moist, fluffy, and delicious muffins; something I very rarely get from any other packaged gluten free baking mix. In less than five minutes you can whip up a batch of muffins, throw them in the oven and in 15-20 minutes have enough muffins for the whole family to enjoy!

The first batch I made I used grape seed oil, I was out of the recommended coconut oil. Although tasty, the muffins were a little greasy. So the second time around I used less than 1-tablespoon oil and they were phenomenal!IMG_6177

Not only do the products taste great, but they also make you feel great! I could really taste the pumpkin, banana, and chocolate in each of the mixes, they all tasted fresh, not grainy or like chemicals.

And the mix can be used for more than just muffins!! You can also make cookies and mint truffles!

Simple Mills products are available online ($8.99 each) and in select retail locations (Unfortunately not Massachusetts yet).

The Healthy Villi Gluten Free Expo 2013 Recap

This past Sunday I attended the New England Gluten Free Expo put on by The Healthy Villi at the Sheraton Hotel in Norwood.Screen Shot 2013-10-22 at 8.44.54 PM

I discovered dozens of tasty new foods, like Against the Grain’s gluten free, dairy free, yeast free bread, and Breads by Anna’s gluten, soy, rice, and nut free bread mixes.

We also had the opportunity to purchase some of the items from the vendors and from A New Leaf. In addition to sampling products, six workshops were held throughout the day, including; Eating Out Around the World Gluten Free, Gluten Free Challenges, and Newly Diagnosed Workshop.
