Last night I tried the Brownie Mix. Jeremy did not like it and I think has to do with the mix of flours used. Although these are not the best brownies I’ve had, they were still pretty good, and have way less sugar than your average mix (14 grams vs. 18-20 grams). I found them to be not as sweet, obviously, but I would love to get used to that.
I used the All Purpose Flour to make gluten free pancakes for breakfast over the weekend. I used this recipe with a few variations (no flax seeds, almond milk)

My favorite is the Carrot Berry Muffin. The muffin is dense and the texture is slightly different than you would expect for a ‘muffin’. I liked the flavor combination of carrots and fresh berries. The muffins are small, but surprisingly filling. I felt like I was eating something indulgent but in reality it is actually so much healthier than most processed muffins.
How to cook: If Defrosted, Heat Veggie Muffin on high for approximately 10 seconds. If Frozen, Heat Veggie Muffin on high for approximately 35 seconds.Quick and Easy! I find defrosting the muffins first, then heating them, give them a slightly better taste and texture.

The oatmeal raisin cookies were my favorite, with great taste and texture! I made a batch as soon as the mixes arrived last week and Jeremy and I devoured them. At only 45 calories each, you can easily have one or two. I liked that there weren’t too many raisins but just enough to satisfy my sweet tooth.
I don’t feel guilty indulging in these goodies.
On weekends I love making pancakes. The high protein pancake mix combines protein with a hint of stevia to make great tasting pancakes with zero sugar and only 41 calories per serving (mix only; calorie cunt goes up when you add the egg and milk). I don’t like pancake mixes that are loaded with sugar, so I am a big fan of this mix. The pancakes turn out fluffy and delicious.
The Banana Chocolate Chip Muffins (also vegan) are a wonderful, guilt-free combination of chocolate and banana all wrapped up in a muffin, creating a great start to your morning. These muffins are full of flavor. I made a batch and froze the rest. After defrosting, the muffins still have great taste.
An exceptional pizza crust with this quick mix that merely involves mixing a few basic ingredients and patting the dough into the pan. No need to wait for the dough to rise. Just pop patted dough into oven and bake, and you will have a homemade pizza dinner in about half an hour.

This fall Krusteaz, maker of premium baking, pancake and waffle mixes, introduced its first line of gluten free products. All the mixes require the addition of water, oil, and/or eggs. The Blueberry Muffin mix comes with a can of real wild blueberries; it is the ONLY gluten free blueberry mix on the market like this.

The Bake-Off requires us to create a recipe using one of the mixes. I had a few recipe ideas in mind but ultimately chose one made with one featuring of my favorite fall foods: pumpkin. I love anything with pumpkin; pumpkin lattes, pumpkin granola, pumpkin pancakes, pumpkin bread, pumpkin hummus, pumpkin chili, roasted pumpkin, pumpkin ice cream….I think you get the idea. So I decided to make Pumpkin Swirl Brownies, and I do have to say, this is one of the best recipes I’ve come up with yet!
These brownies were delicious! I have to say these are some of the best gluten-free brownies I’ve had. I have tried many gluten free boxed brownie mixes over the past few years, and some really don’t quite cut it. These tasted like the real deal. Jeremy even raved about them. The only downside is the amount of sugar. These brownies are sweet— and addicting— and personally I would like to see these made with a little less sugar.
Preheat oven to 325F. Lightly grease a 11×7-inch baking pan.
Stir together all the ingredients for the brownies, except for the coconut flakes
In a separate bowl, stir together all the ingredients for the pumpkin swirl
Pour 2/3 of the brownie mix into the greased baking pan and spread evenly
Pour the entire pumpkin swirl mix over the brownie mix and spread evenly
Top with the remaining brownie mix and spread easily
Sprinkle with coconut flakes.
Bake for 50 minutes or until a toothpick placed in the center comes out clean
Cool completely in pan before cutting.
The advantage of mixes is that most of the prep work is already done for you. All the dry ingredients are already mixed together in a box. And all you need to do is add in a few wet ingredients and stir. The disadvantage is you can’t control what’s already in the mix. With 20 grams of sugar per serving, I wish there was just a little less sugar.

This bagel had a slightly different taste and texture than ‘’normal’’ bagels, but I really liked it nonetheless.
I also like that Low Carb Bread products are grain free. The bagel is made with organic coconut flour, almond flour, water, egg whites, organic golden flaxseed meal, organic unrefined virgin coconut oil, baking soda, sea salt, and stevia.

Last October I attended the Healthy Villi’s Gluten Free Expo and tried for the first time, Breads from Anna. I remember loving the breads; the taste, texture, consistency were all incredible. But since then I have not been able to find Breads from Anna in any of my local grocery stores.
So when I received a box of six mixes last week, I was beyond thrilled. I was so excited that I got baking right away!

The bread mixes were by far my favorite. Each one was flavorful and had amazing texture. The loaves rose beautifully without yeast— all three bread mixes I made were yeast free.
The pumpkin bread was a deliciously spiced bread with a moist and smooth texture. It was not grainy or crumbly like many gluten free bread mixes I’ve tried. My dad also loved the pumpkin bread and didn’t even realize at first that it was gluten free!
The banana bread was also a hit; Jeremy really liked this one. It was also moist and had a great banana flavor.
The yeast free bread was also a winner. I don’t have a bread maker but it came out just fine cooked in my oven. The taste was amazing and made excellent sandwich bread. I also cut a few thicker slices to make French toast and it held up quite nicely to the egg and milk mixture.
The black bean brownies were a big disappointment. I did not like them at all. I was surprised because the breads were excellent. It is optional to add chocolate chips or walnuts, something I did not do and wish I had. Perhaps it would have tasted better with the add-ins.
The maple pancake and muffin mix made great pancakes but not so great muffins. The flavor of the muffins was not the issue. The consistency of the muffins was similar to a non-fluffy pancake, if you can imagine that. And the mix is just not sweet enough to be muffins, and this is coming from someone who doesn’t eat a lot of sugar!
But, as pancakes the un-sweetness was perfect. The pancakes were not very fluffy, but rather they were pretty flat. The texture was ok but the taste was still pretty good.
Anna provides recipes online for each of her mix for those of you who like to experiment. For example the pumpkin bread mix can be used to make the pumpkin bread recipe provided on the box, or muffins, zucchini bread or carrot cake. The black bean brownie mix can also be used to make ice cream sandwich cookies or peanut butter cookies. You get the picture.

I’m excited to share with you today a new product that I was recently introduced to and absolutely love!
Simple Mills makes gluten free and grain-free almond flour muffin mixes. I almost never make muffins from mixes, but Simple Mills mixes are easy to prepare and taste delicious and fresh, making for a convenient breakfast on busy mornings.
Simple Mills founder, Kaitlin, created the company in an effort to make allergy-friendly eating nutritious, fast, and easy—and delicious. There’s nothing you can’t pronounce, or have to guess what is it, and there is zero refined sugar!
Unlike traditional gluten free flours, almond flour has zero carbohydrates, a neutral blood sugar impact, and high nutrition (protein, monounsaturated fats, Vitamin E, magnesium, and protein!). Each muffin has only 130 calories, 6 or 7 grams of sugar, and 4 grams of protein per serving. It also makes very rich, moist products, which is a welcome change from most gluten free mixes!
Simple Mills muffin mixes come in three varieties: Banana, Chocolate, and Pumpkin.
Each of the mixes made light, moist, fluffy, and delicious muffins; something I very rarely get from any other packaged gluten free baking mix. In less than five minutes you can whip up a batch of muffins, throw them in the oven and in 15-20 minutes have enough muffins for the whole family to enjoy!
The first batch I made I used grape seed oil, I was out of the recommended coconut oil. Although tasty, the muffins were a little greasy. So the second time around I used less than 1-tablespoon oil and they were phenomenal!
Not only do the products taste great, but they also make you feel great! I could really taste the pumpkin, banana, and chocolate in each of the mixes, they all tasted fresh, not grainy or like chemicals.
We spent the morning strolling and browsing the aisles of dozens of gluten free vendors, sampling gluten free chips, crackers, breads, bagels, pizza, pasta, beer, cupcakes, baked goods, and so much more. I discovered dozens of tasty new foods, like Against the Grain’s gluten free, dairy free, yeast free bread, and Breads by Anna’s gluten, soy, rice, and nut free bread mixes.
We also had the opportunity to purchase some of the items from the vendors and from A New Leaf. In addition to sampling products, six workshops were held throughout the day, including; Eating Out Around the World Gluten Free, Gluten Free Challenges, and Newly Diagnosed Workshop.
