Gluten Free Mulay’s Sausage Product Review

Many sausages have “fillers” in them that are grain based, and therefore contain gluten. Fillers help cut the cost of using 100% meat in a sausage. The grain also helps to absorb the fat in these traditionally fatty links. Well today, I want to introduce you to a sausage that is 100% gluten free.

Mulay’s Sausage is a natural tradition made according to Nana’s centuries old recipes from Sicily. With a family crest that dates back to 1326 AD when ancestor Nicolo’ was the Senator of Palermo! Though the Mulay family has moved around a bit but nothing has been able to change the way Mulays’ make Sausage! It has always been All Natural and Gluten Free. It has never had nitrates, msg, soy, sugar, dairy, artificial colors or flavors; and it is still made that way today.

Mul_all

Mulay’s Sausage is 100% Natural Pork and comes in a variety of flavors:

  • Hot Italian Sausage
  • Mild Italian Suasage
  • Killer Hot Italian Sausage
  • Chorizo Sausage
  • Bratwurst
  • Breakfast Sausage

All sausages are available in links or ground. We love to grill the links and we’ve used the ground sausage to make breakfast sandwiches, Bolognese sauce and meatballs! I love that there are very few ingredients; 5 to be exact! The ingredients are pork, red pepper, black pepper, salt and spices. Simple yes flavorful!

Certified Steak and Seafood Company

Jeremy and I love cooking together. Cooking and trying new foods was one of the things that we bonded over when we first met. Six years later, we still enjoying making dinner together, trying new foods and new recipes, whether at home or at a restaurant. This past Friday night we had the chance to cook a delicious, high quality meal together thanks to Certified Steak and Seafood Company. They sent over a Surf and Turf kit complete with:

6 oz. Bahamian Lobster tail (2 pack)
9 oz. Chilean Sea Bass
8 oz. Angus Filet Mignon

certified-steak-and-seafood-logo

While we love Chilean sea bass, it is a fish we have only ordered at restaurants. And not very often, as it can be expensive. Sea bass is not something either of us had ever cooked before. After doing a little “research” on google we decided on a simple recipe: garlic, olive oil, salt, pepper and paprika. We baked the sea bass in the oven at 400F for about 20-25 minutes and finished it with lemon juice. It turned out absolutely perfect. It was perfectly cooked and held its shape during cooking, yet flaked easily when I shook my fork at it! It was so buttery, tender and smooth. It was definitely the highlight of the meal for me.

img_1018

If there was ever a steak that you would believe could melt in your mouth, the Certified Steak and Seafood angus Filet Mignon is it. It has a delectable almost sweet beef flavor, with a strong buttery undertone that has to be tasted to be believed. Each filet mignon is hand-selected, cut from the center of the tenderloin, aged and custom trimmed for consistency in color and quality. It is a flavor you will remember long after your meal is over. Great accompanied by grilled root vegetables and horseradish mashed potatoes.

img_1024

The Angus Filet Mignon was also delicious, and one of the best and highest quality pieces of meat we’ve ever purchased. They truly did melt in my mouth! We pan seared it in a cast iron skillet with a little olive oil, salt, pepper and garlic then finished it off in the oven for 15 minutes, rotating half way through.

img_1016

This was the first time I’ve ever tried Bahamian lobster tail. I’ve only ever had Maine lobster. So, how did these compare? Bahamian lobster is not as sweet as Maine lobster, is milder in flavor and not as rich. But that doesn’t mean it didn’t taste good! It was just different. You can grill the lobster tails or broil them. Included with the kit were three recipes, and we chose to follow the one provided for the lobster tail. We broiled it with a little lemon juice, olive oil, salt and pepper.

Their vast experience in selling high quality seafood and meat products to the commercial trade means they’re able to bring you the same grade of products fine restaurants, resorts and hotels demand. Living the prime life has never been so easy. Beyond providing great products at affordable prices, the brothers’ background in working with commercial customers has taught them about the importance of taking each customer’s needs into consideration. It’s their commitment to quality, value and attentive service that sets Certified apart.

Espuña Español // Gluten Free Tapas

Espuña, producers of authentic Spanish tapas and cured meats, made their U.S. debut at the Summer Fancy Food Show in June. The Espuña family has been producing authentic charcuterie in Spain for nearly 70 years, which means they are the real deal, and with the introduction of two lines the company will finally be debuting their expertise in the U.S – Espuña Tapas Essentials and Espuña Tapas Essentials All Natural.

IMG_5714

The term “tapas” originated in Spain meaning “cover” or “lid” which took the form of a slice of meal or bread that was placed on top of your wine glass. This helped to avoid having dust from the dirt roads settle in your drink. Today the term “tapas” refers to an appetizer or light meal often enjoyed with drinks. Espuña‘s traditional Spanish tapas and cured meats are readily available to enjoy for any occasion…and with whatever beverage you choose!

Espuña’s products are made true to century old Spanish recipes and techniques, using premium pork meat, the world’s best Spanish paprika, and hand-selected spices to provide a truly authentic taste of Spain. You can now enjoy Serrano Ham imported from Spain as well as all natural, nitrate free chorizo produced made in their Gloversville, NY facility.

Grill Up a Better Burger with JENNIE-O® Lean Ground Turkey

Grilling season is here! There are a lot of temptations at backyard barbeques; chips, desserts and fatty burgers to name a few. The easiest way to get a better-for-you barbeque is swapping in JENNIEO® Lean Ground Turkey for ground beef.

If you are looking for easy ways to lighten up your summer meals without sacrificing taste, read on for some inspiration and helpful tips to getting the juiciest, most flavorful turkey burgers ever!

IMG_4610

Take the fat out of your burger—not the flavor! You can easily avoid serving dry, flavorless turkey burgers. Simply follow these simple tips for grilling a juicy turkey burger that will have everyone begging for your secrets.

STEP 1: Don’t over mix the ground meat

Working with the turkey too much can make it dense and tough.

STEP 2: Add some oil or onions

Add 2 tablespoons of heart-healthy olive oil or sautéed onions to the ground turkey before forming patties.

STEP 3: Form patties

Create 1/2 inch thick for even cooking (no dry edges!)

STEP 4: Keep your patties cold

Put them in the refrigerator until you’re ready to use them for the juiciest, tastiest burgers

STEP 5: Dont press your burgers

Pushing down on your burgers with your spatula will cause you to lose the juices!

STEP 6: Turn meat just once on the grill

Turning too often slows cooking and can result in a tough, dry burger

STEP 7: Don’t overcook the burgers

Start with 9 minutes on each side; use a meat thermometer to ensure it’s cooked to 165 F; cook longer if necessary

STEP 8: Allow burgers to rest

Set your cooked patties aside for a few minutes before serving to let juices redistribute.

Ready to eat your juicy turkey burger? Great. Browse Jennie-O recipes for topping ideas.

I not only swap Jennie-O ground turkey fin burgers but also in meatballs, tacos, and stuffed zucchini peppers! It’s so easy to do and when you add spices and natural flavors like garlic and onion, it’s just as tasty, if not more!

Gluten Free Options at Vejigantes Restaurant Authentic Puerto Rican Cuisine // South End

The South End is one of Boston’s best dining destinations. Among the lesser-known restaurants is Vejigantes, an authentic Puerto Rican restaurant.. Vejigantes is located just off of Tremont Street, on W Dedham St., in Villa Victoria, an affordable housing development, which is perhaps why so many people haven’t heard of if. But I encourage you to make a visit; I promise you won’t be disappointed.

Screen Shot 2014-05-22 at 12.26.49 PM

Vejigantes, with over 20 years of experience in the culinary industry, brings the best of the traditional Puerto Rican food. Located in the heart of Villa Victoria, Vejigantes is representative and a testament to the struggle of the Puerto Rican community in Boston. Vejigante is a clown-like character that plays an important (and mildly terrifying) role in many Puerto Rican festivals and carnivals.

Vejigantes is unique in its kind; there is nothing else like it in the city of Boston. Vejigantes is designed with an island ambiance and feel. The bright colors and traditional music make you feel welcome, and make you feel like you have actually stepped out of Boston and onto the Island of Puerto Rico.

The wine list, although rather small, features mostly New World wines (I learned this term at the Boston Wine School last month!). Glasses range from $6-$9, while bottles are priced at $27-$35, with a few more expensive bottles rounding out the list. It’s nice to see bottles in the $20-$30 range, it doesn’t happen that often these days. They also have a number of bottled beers and after dinner shots. But the cocktail menu is the highlight. Mojitos ($10), margaritas ($9), frozen daiquiris ($8) in flavors like passion fruit, banana, guava, and mango, made by adding rum to the tall fruit smoothies that are called batidos ($8), and available without alcohol.

But the real reason you should come to Vejiantes is the food. With authentic flavors, colorful and vibrant dishes that are beautifully prepared and presented, Vejiantes serves up some of the most delicious food in the city.

We started with an order of plantain chips served with fresh guacamole and home made salsa ($5). Please note, the plantains are fried in the same fryer as gluten.

IMG_7951

The Group Ceviche ($8) was served with two green plantain “patties,” also gluten free.

IMG_7694

I ordered the Grilled Red Snapper in a light garlic sauce ($19). The snapper was very fresh, the meat was firm, and the skin was nice and crispy. It was served with vegetables and outstanding yellow rice seasoned with a complex sofrito (garlic, onion, paprika, peppers and tomatoes cooked in oil) and dotted with pigeon peas, and pork.

IMG_7692

Jeremy ordered the Churrasco con Salsa Chimichurri ($19), a grilled skirt steak with chimichurri sauce. We were impressed the portion size and the freshness of the sauce; one of the best chimichurri sauces Jeremy said he has ever had.

IMG_7693

We also tried the Shrimp in Vejigante Creole Sauce ($18). This dish was also delicious. We loved the sauce and there were a good 9-10 shrimp in the dish!

IMG_7953

One of the more emblematic traditional Puerto Rican dishes on the menu is the mofongo ($8), a flat-topped cone of mashed and fried green plantains stuffed with meat and served with chicken broth. This hearty dish, has a mild, lightly crisped outside, and is one of the best values on the menu. You also have the option of ordering it with chicken or pork. There are also several paellas for single servings or to share. This dish is naturally gluten free but it is fried in the same fryer as gluten containing items.

If you are looking for great food off the beaten track I recommend heading over to Vejigantes. Now that the weather is getting warmer, Vejigantes offers outdoor seating.
