Gluten Free Goodie Girl Cookies

When I was a little girl I was a Girl Scout and I loved the Thin Mint Cookies. I would make my mom buy boxes so we could eat them for months. 2009 was the last time I ate a thin mint cookie. Well thanks to Goodie Girl Cookies and their new “Slims”, I can finally enjoy thin mints again!

Goodie Girl Cookies is based out of Tribeca, New York, specializing in gluten free cookies with surprising flavors, as well as exciting twists on cookie classics.  In 2010, Founder, Shira Berk, also a mom and native New Yorker, began her journey to create an all-natural, super-delicious line of cookies that are all gluten free. Her intention was to create cookies that were intended for anyone to eat, but still be accessible to the 30%-and-growing number of population who had to avoid gluten.  Interestingly neither Berk, nor anyone in her family is Celiac, gluten-intolerant, or in need of a gluten-free diet.  

Goodie Girl Cookies break the – often dry and flavorless – gluten free cookie mold. The gluten free version of the Girl Scouts’ Thin Mints, called Mint Slims, are my favorite and absolute delicious. Mint Slims are thinner and less dense than the original girl scout cookies and are coated in milk chocolate vs. dark chocolate, but I still find the flavor spot on. Now, I haven’t had a girl scout cookie in 8 years, but my husband loves them too so that says something. The Vanilla Slims are vanilla cookies dressed up in a dark chocolate coating. Definitely acompliment for Vanilla lovers. We also devoured these.

In June I attended the Summer Fancy Food Show where I met Elisabeth Allwein, the Food Development Director at Cheryl’s. There, I had the chance to talk to her about Cheryl’s new line of gluten free cookies and brownies, which just hit the market this past summer!

The gluten-free line features Cheryl’s famous baked goods including fudge brownies, brownie walnut cookies, snicker doodle cookies, chocolate chip cookies, and buttercream frosted sugar cookies, which is to die for. The new gluten free goodies exceed the FDA regulations for gluten free foods, meaning you can safely eat all the cookies you want! The gluten free line is made in separate, dedicated gluten free facility. And they make for the perfect Valentine’s Day gift for your gluten free loved one(s)! 

I’ve tried a lot of gluten free cookies over the years and I have to say that the buttercream frosted cookie is one of the best by far. It is soft and sweet enough that it keeps me coming back for more. I’m also a big fan of the snickerdoodle cookies and fudgey, chocolaty brownies!! The Brownie walnut cookies and chocolate chip cookies are for those that prefer hard and crunchy cookies, they taste great, but I just prefer the softer cookies.

Cheryl’s already employs some people from ARC, and continues to support this community group and their kitchen, as a training ground for seasonal hires in the future. Cheryl’s brought in some of its own gluten-free equipment, sanitation and production processes as well as management to work with ARC employees.

The dessert collection focuses on satisfying sweet cravings while effortlessly fitting into a well-balanced diet by using wholesome, nutritionally-rich ingredients.  Each item is thoughtfully crafted with healthy portion control in mind, designed to delight and indulge the palate without overwhelming the body.

Bella Gluten-Free Chocolate Chip Cookie Mix was the first mix I made. It starts with a 100% allergen-free All Purpose Baking Mix, creating the perfect texture. Mixed with dextrose-free chocolate chips and organic coconut sugar, a subtle sweetener like brown sugar, with a hint of caramel, make for a chewy on the edges and soft in the middle cookie. The mix makes about 18 cookies and didn’t last long in our apartment. Within days Jeremy and I had eaten them all! Time to go to the gym I guess…

The brownies were even better than the cookies! These chewy chocolate brownies are loaded with rich chocolate chips and cocao powder for delicious chocolately goodness. Whether you like them gooey (like me!) or classic cake-like you can have hot brownies in minutes. 

And tonight is Pizza Night! We are going to be making his (loaded with cheese) and her (dairy free, with tons of vegetables) pizzas! 

Here are a couple of tips that you may find useful for Bella Gluten Free Cups: 
 
Tip for your pizza: Use moistened fingertips to shape on sprayed parchment paper. I like crispy crust so I parbake for 7 minutes and then add my toppings, but you do not have to-it is delicious if you put it all together from the beginning!!
 
Tip for your biscuits and scones: freeze butter or butter substitute for 20 minutes or so and use a cheese grater to grate and disperse it throughout the mix before adding your wet ingredients.  Scones: use wet fingertips and form a circle with dough about 2 inches thick. Use a warm slightly wet knife to cut into 6-8 pie shape wedges, separate a little. They are not very sweet so if you plan on eating with jam or curd then great, if not add a bit of finishing sugar on top of each wedge. 
 
Tip for your multigrain rolls:  use ice cream scooper to get equal amounts and even baking (this is a great tip for the chocolate chip cookies too), place the scoops of bread dough into a sprayed muffin tin and let rise in warm place for 15 mins and then bake!  Also you can form a circle to make a Boule out of the dough and increase bake time to 25 minutes (or use thermometer to temp at around 190-200 degrees for done).

Namaste Foods knocks it out of the park again with their baking mixes! The taste, texture and consistency of the gluten free cookies were spot on. The cookie mix is so versatile, just like many of Namaste’s other mixes. On it’s own, this cookie will taste like your favorite sugar cookie, and also make delicious snicker doodle cookies (my favorite!). Or get creative and add dried apricots and macadamia nuts, chocolate chips or peanut butter chips, or any combination that pleases your palate! 

I also like that these cookies are not loaded with sugar. While most cookies have upwards of 20 grams of sugar per serving, Namaste’s gluten free cookie mix only has 9 grams.

Ingredients
  1. 3⁄4 cup shortening
  2. 2 eggs
  3. 1 cup canned pumpkin
  4. 1 tsp vanilla
  5. 1 cup sugar
  6. 1 1⁄2 tsp baking soda
  7. 1 1⁄2 tsp baking powder
  8. 1 tsp Pumpkin Pie Spice
  9. 1 1⁄4 cup White Rice Flour
  10. 3⁄4 cup Potato Starch Flour
  11. 3⁄4 cup Chocolate chips
Instructions
  1. Preheat oven to 325 degrees F.
  2. Cream together the shortening, eggs, pumpkin, vanilla, and sugar.
  3. Add the remaining ingredients and mix well. You may swap raisins or pecans of the chocolate chips, depending on your preference.
  4. Lightly grease a baking pan. Spoon out dough about the size of a walnut.
  5. Bake for about 15 minutes or until lightly browned on the edges.

Schmackary’s Gluten Free Cookies // Hell’s Kitchen NYC

One of the best discoveries I’ve made since moving to New York City in September is Schmackary’s gluten free cookies.

Schmackary’s is located off 9th Avenue in Hell’s Kitchen, which is both good (it’s convenient) and bad (it’s so close, I go all the time!)

The menu features over 45 types of “modern cookie classics” and “seasonal cookie sensations” that rotate daily and seasonally. Everyday they offer one or two gluten free cookies and one gluten free macaroons

The gluten free flavors include:
{V = vegan N = may contain nuts}

Yogi Bare: {V, N} gluten free oats / peanut butter / applesauce / cranberries / almonds / sunflower seeds / pumpkin seeds / raisins / maple syrup / cinnamon

Mint Mojito: corn flour / fresh mint leaves / lime oil / cuban rum glaze

Strawberries & Cream: strawberries / white chocolate / strawberry glaze

Surprisingly, I loved this flavor. I’m not a big matcha fan, but the flavor is mild and the white chocolate chips add a nice sweetness.

If you can imagine cornbread in cookie form, then you can imagine what this delicious
cookie tastes like.

Candied Yam: corn flour / sweet potato / brown sugar / cinnamon / toasted marshmallow

Delicious toasted marshmallow frosting tops a mildly flavored cookie. I couldn’t taste the yams, I was worried it would be too strong but it was judt fine.

Lemon Poppy: corn flour / lemon / poppyseed / sweet lemon glaze

Eggnog: gluten free sugar base / eggnog frosting / cinnamon

The cookies are soft and gooey and keep me coming back for more. I can’t say enough good things about the cookies. Although, I would like to see more gluten free options each day!

The new line debuts with three varieties: Pure Butter Shortbread, Chocolate Chip, and Ginger & Lemon. Walkers promises the pure butter taste and texture you love, just without the gluten.

The new line evolved from years of development to produce a pure buttery taste that founder Joseph Walker would have proudly served at his Scottish Highland village bakery. Close your eyes, bite in and see if you can tell the difference. You can’t. So if you’ve been missing shortbread cookies, you no longer have to yearn for them thanks to Walkers!

Walkers Gluten Free line replaces wheat flour with a blend of rice flour, maize flour, and potato starch, while retaining the same butter and sugar content as the traditional shortbreads. As is Walkers custom, the cookies contain no artificial flavorings, colorings, or preservatives. The texture and taste are spot on. It tasted and felt exactly like a shortbread cookie. Jeremy couldn’t notice a difference and the cookies didn’t last long in our apartment; he devoured them!
