I love chilaquiles and have tried many different corn chips in this recipe. The MixtBag tortilla chips held up nicely to the sauce and made for a delicious and crunchy base for the shredded chicken and fresh cilantro. This super simple recipe is easy to make yet delicious!

Gluten Free Snack Swaps

Summer Entertaining Recipes featuring Simply7 Snacks

Memorial Day is fast approaching, and with it the official kick-off to summer parties, BBQ’s and weekend beach trips! I wanted to share a few light and easy summer entertaining recipes featuring Simply 7 Snacks, and let you in on Simply7’s newest kale chips!!

Roasted Corn & Black Bean Salsa

Ingredients:

  • 2 – 15 oz. cans whole kernel corn, drained
  • 2 – 15 oz. cans black beans, rinsed and drained
  • 10 plum tomatoes, seeded and chopped
  • 1 medium red onion, chopped
  • ¾ cup minced fresh cilantro
  • 4 jalapeno peppers, seeded and chopped
  • 1 Serrano pepper, diced
  • ½ cup lime juice
  • ½ tsp. sea salt
  • ½ tsp. cumin
  • Simply7 Kale Sea Salt, Kale Lemon & Olive Oil or Organic Veggie Chips

Directions:

  1. Roast the corn in a pan on medium heat until golden.
  2. Combine the corn and remaining ingredients in a large bowl.
  3. Cover and refrigerate until serving.
  4. Garnish with a pinch of paprika and fresh cilantro before serving. Serve with Simply7 Kale Sea Salt, Kale Lemon & Olive Oil or Organic Veggie Chips.

Zesty Lemon Hummus

Ingredients:

Directions:

  1. In a food processor, combine the oil, beans/chickpeas, lemon juice, garlic, sea salt and black pepper; cover and process until smooth.
  2. Add lemon zest and additional sea salt to taste.
  3. Serve with Simply7 Kale Lemon & Olive Oil or Organic Veggie Chips.

Lime Cilantro Guacamole

Ingredients:

  • 4 ripe Hass Avocados
  • 1/3 cup canned garbanzo beans, rinsed and drained
  • 3 tbsp. freshly squeezed lemon juice
  • 2 tbsp. freshly squeezed lime juice
  • ½ tbsp. freshly squeezed orange juice
  • ½ tsp. paprika
  • ½ cup small-diced red onion
  • 2 tbsp. fresh chopped cilantro
  • 1 tsp. sea salt
  • 1 tsp. freshly ground black pepper
  • ½ tsp. cumin
  • 1 medium tomato, seeded and diced
  • 1 medium jalapeno, seeded and finely chopped
  • Simply7 Kale Chips or Organic Veggie Chips

Directions:

  1. Cut the avocados in half, remove the pits and scoop the flesh into a large bowl. Using a fork, mash the avocados until smooth.
  2. Puree the garbanzo beans in a food processor with a dash of salt.
  3. Combine the avocado and garbanzo puree with the lemon juice, lime juice, orange juice, paprika, onion, cilantro, sea salt, black pepper and cumin.
  4. Fold in the tomatoes and jalapeno and mix well.
  5. Garnish with fresh cilantro. Serve with Simply7 Kale Sea Salt, Kale Dill Pickle, Kale Lemon & Olive Oil or Organic Veggie Chips.

Summer Citrus Ceviche

Ingredients:

  • 8 ounces fresh white-fleshed ocean fish (halibut, grouper, sea bass, red snapper)
  • 8 ounces skinned, deveined shrimp
  • ½ cup fresh lime juice
  • 3 tbsp. fresh orange juice
  • 2 tbsp. fresh lemon juice
  • 1 ½ tbsp. finely diced Serrano pepper
  • 1 tbsp. finely diced jalapeno, seeded
  • 2 tsp. minced red onion
  • 1 tsp. minced garlic
  • 3 tbsp. finely diced yellow bell pepper
  • ½ medium tomato, seeded and small diced
  • 2 tbsp. fresh cilantro, chopped
  • 1 tbsp. extra virgin olive oil
  • ¼ tsp. cumin
  • 1 tsp. sea salt
  • ½ tsp. black pepper
  • Simply7 Kale Chips or Organic Veggie Chips

Directions:

  1. Cut the fish and shrimp into 1/4 –inch diced pieces.
  2. Combine in a glass dish with lime juice, orange juice, lemon juice, Serrano pepper, jalapeno, onion and garlic. Toss to coat.
  3. Cover and refrigerate for 3-4 hours, stirring occasionally.
  4. Gently fold in the bell pepper, tomato, cilantro, olive oil and spices.

Serve in a bowl, or martini glass and garnish with lime wedges. Pair with Simply7 Kale Sea Salt, Kale Sea Lemon and Olive Oil, Kale Dill Pickle Chips, or Organic Veggie Chips.

Gluten Free Awareness Month Day 19: Wellaby’s Gluten Free Crackers & Cheese Ups

Wellaby’s is a gluten-free snack and cracker brand imported from Greece. All of Wellaby’s products are made in a dedicated Gluten Free facility, thus eliminating the risk of cross-contamination. In addition, they conduct constant lab tests to ensure that Wellaby’s products always deliver the best quality and never become contaminated with unwanted ingredients. Wellaby’s products are also non-GMO, and free from trans fats, soy, peanuts, tree nuts, and preservatives.

Wellaby’s makes a variety of snacks including my favorite pita chips (which I reviewed last year on my blog.)

Chili Cheese Ups

I recently tried the newest flavor of Wellaby’s Cheese Ups line; Chili. These small triangle-shaped, slightly puffy, crackers are a tasty and fun snack to eat. Available in four flavors— Classice Cheese, Parmesan Cheese, Chili, and Smokehouse Cheese— they are made with 43% real cheese.

The Chili Cheese Ups are just like the classic Cheese Ups; light and crunchy, but with a spicy chili twist. The flavor and spiciness is not too hot, I can handle it, but it gives it a nice little kick at the end.

Wellaby’s crackers are available in 4 flavors— Classic Cheese, Feta Oregano Olive Oil, Parmesan Sundried Tomato, and Rosemary. Baked, not fried, with 65% less fat than normal potato chips, the crackers are perfect for pairing with dips and spreads, and they had no aftertaste like some other gluten-free products. Nor did they make my mouth dry as some products tend to do.

The Rosemary Crackers have aromas of Mediterranean herbs that you can taste and feel down to the very last bite.

Chips and salsa are one of my favorite gluten free snacks. Tortilla chips and salsa are almost always gluten free. Come to think of it, I don’t know any that are not. Even though it is incredibly easy to find gluten free chips and salsa, it’s not always easy to find healthy, fresh, and non-GMO varieties.

Let me introduce you to Green Mountain Gringo Salsa and Tortilla Strips.

The tortilla strips were a huge hit in this house. They were crunchy and fresh tasting. The Strip was invented to go beyond sturdy and reliable to reach a whole new level of taste satisfaction. A solid rectangle of pure leverage makes it stable enough for the most aggressive of dippers. Either end features an ergonomic handle allowing even the “power dipper” an enjoyable experience. Sturdy and dependable, they won’t break short of your expectations.

It’s important to me that I can pronounce all the ingredients in the foods I buy. The tortilla strips have just that. Like all Green Mountain products, these strips are gluten free, preservative free, fat free, kosher certified, non-GMO and all natural.

Food Should Taste Good Gluten Free Tortilla Chips Review and GIVEAWAY

At my house, I try to make sure we have healthy snack options. For us, that means food that is truly food and is not overly processed. So, when I had the opportunity to review Food Should Taste Good (FSTG) tortilla chips, I didn’t hesitate to say yes.fstg_blacklogo

Thankfully I had taken a picture of all 4 bags as soon as I received the box because the same night I received them, Jeremy tore into one of the bags and nearly ate the whole thing!

The Olive chips are made with a combination of real black kalamata and green olives, offering a genuine flavor, which punches up a quick snack and pairs great with hummus. I was surprised by how much I liked this flavor, because I don’t usually like olive flavored snacks.

IMG_5206The Lime tortilla chips are made with real lime juice and are a refreshing snack for anytime of the day. They are perfect on their own and a great addition to any dip, especially guacamole. FSTG has some great recipes for dips to go along with these chips (and other flavors too!).lime_digimock

The Multigrain tortilla chips provide an extra helping of protein and fiber, and are made from healthful ingredients such as quinoa and flax seeds. They still contain fat and sodium, which are hard to avoid in this kind of snack food, especially without using artificial flavorings or additives.

I really liked the Sweet Potato (surprise, surprise). A hint of cane sugar enhances the natural nuttiness of the sweet potato. Both this flavor and the multigrain were thick enough to be used as a cracker as well.IMG_5332

Overall these are really good chips with great taste and sophisticated flavor. The best part is that they are full of simple, healthy ingredients—quinoa, flaxseed, sweet potato—and made without the unhealthy stuff, like MSG, trans fat and artificial flavors.

Goldbaum’s sent me two of the four flavors to tryJust Salt and Roasted Garlic. Both were very crispy and crunchy, yet not too hard. You would never know they were gluten free; they were simply delicious. The roasted garlic had an amazing flavor and I highly recommend it.IMG_5218

They’re great on their own or with your favorite topping. I enjoyed eating them both plain and topped with tomato chutney and apple-curry chutney. IMG_5221Goldbaum’s also just introduced a line of multigrain quinoa crisps. Made from protein-rich quinoa, brown rice, wholegrain corn, flaxseed and teff; these crisps are wholesome, crispy, and crunchy. The crisps are light and airy and come in a medley of flavors including Onion and Garlic, Sea Salt, and Barbeque. One serving, about 19 chips, contains 2 grams of fiber, 3 grams of protein and only 100 calories. IMG_4965The Onion and Garlic and the Barbeque both had great texture, a nice crunch, and were delightfully seasoned.
