I love eggs. I eat eggs multiple times a week – scrambled, over easy, omelettes, frittatas – you name it and I eat it! I love omelettes but sometimes the classic American way can get boring. Have you ever had a Japanese omelette, also know as tamagoyaki. This rolled egg dish is super easy and fun to make! I have a special TeChef non-stick pan for making this, but if you do not have one, you can use any small pan that you have! 


This Japanese style omelette is rolled into a log shaped form composed of thinly cooked layers of egg with only three ingredients – eggs, gluten free tamari and salt! 

Tamagoyaki / Japanese Omelette

  1. 4 eggs
  2. 1/4 tsp salt
  3. 1/4 tsp tamarin or gluten free soy sauce
  4. 1 Tbsp Mirin or 1/4 tsp sugar - optional
  5. 1 tsp oil
  1. Instructions
  2. Mix eggs, salt, soy sauce and Mirin in a bowl.
  3. Heat a pan at medium high temperature and add oil.
  4. Pour a thin layer of egg mixture in the pan, tilting to cover the bottom of the pan. After the thin egg has set a little, gently roll into a log. Start to roll when the bottom of the egg has set and there is still liquid on top. If you let the egg cook too much, it will not stick as you roll the log. Now you have a log at one end of the pan. Pour some more egg mixture to again cover the bottom of the pan, with the roll of egg at the end. After the new layer has set, roll the log back onto the the cooked thin egg and roll to the other end of the pan.
  5. Repeat adding egg to the pan and rolling back and forth until the egg is used up.
  6. Remove from the pan and cool for 3-4 minutes.
  7. Slice the ends of the log off and then slice the log into 1/2″ pieces. You should see a nice spiral pattern in the cross section of the egg.

Freedom Foods recently launched new cereal flavors & muesli bars this fall

Freedom Foods, an Australian company, makes allergen-free cereals and granola bars. Freedom Foods’ core line of breakfast cereals and oat bars are available in a wide range of flavors that offer not only allergen-free safety, but, better nutrition and taste. More importantly, they use clean and recognizable ingredients so you won’t feel guilty eating as you nosh.


Freedom Foods has been around since 1990 but is relatively new to the United States. If you are like me, then you grew up eating Cheerios™ and pretty much every other cereal produced by General Mills. But that all stopped in 2009 when I was diagnosed with a gluten intolerance, and I’ve been without my beloved Honey Nut Cheerios™ ever since. 


So when I heard that news earlier this year that General Mills would be coming out with a gluten free version of Cheerios™ I was SO EXCITED. I was overcome with nostalgia for my childhood days eating Cheerios™ while watching Saturday morning cartoons. And not only Cheerios™, but Honey Nut Cheerios™, MultiGrain Cheerios™, Apple Cinnamon Cheerios™ and Frosted Cheerios™ too. How lucky can a girl get? 

Currently, about 1% of the population is Celiac, and as much as 30% of the population is avoiding gluten. It was important for General Mills to remove gluten from Cheerios so that these large groups could enjoy Cheerios, too. General Mills also only wants what matters to go into its product, and by removing stray wheat, rye and barley, it is delivering a more pure version of Cheerios. This simple change means more people eating gluten free diets will soon be able to enjoy their favorite kind of Cheerios again. Gluten-Free Cheerios were achieved by changing the ingredient-sorting process — not the ingredients themselves. (The one exception is for MultiGrain, which was reformulated to include sorghum and millet instead of wheat and barley.) Read on to see how. 


Cheerios have always been made of oats, which are naturally gluten free. But many farmers who grow oats rotate their crops, and that means they also grow grains that have gluten (wheat, barley, rye, etc.). As we are all well aware these grains often get mixed in with the oats during harvest or transport and the chances for cross contamination are high. To make Cheerios gluten‑free, GM has to separate those other stray grains from the oats. All the oats are sifted to sort out the grains of barley, wheat and rye. Every batch of sifted oats is then tested to make sure that the oats are gluten-free. If not, those oats are re-sifted and tested again. Then, the gluten-free oats are milled into flour in a mill that’s dedicated to making gluten‑free flour. Once the oats are milled, the flour is tested again to verify (ensure) that it’s still gluten‑free. The gluten-free oat flour gets shipped to the plant, transported in dedicated gluten‑free trucks and rail cars. And then it’s made into Cheerios using the same recipe as always on dedicated gluten-free systems; they puff and toast the oat flour into Cheerios. The finished Cheerios are checked once more to ensure they’re gluten‑free.

I’m sure some of you are still a little skeptical about this whole process. I was too at first, so I dug deeper to find better answers. And this is what I found:

It took 5 1/2 years to test and refine the process which make the oats gluten-free, ensuring that they test below the FDA standard of 20 ppm. As I said before, every batch of oats is tested to make sure it has less than 20 parts per million of other grains. That means, on average, for every 15,000 grains of oats, there can be no more than 1 grain of wheat, barley, or rye. To put this in perspective 1 lb of oats equals 1 box of cereal or 15,000 pieces of oats.  The industry standard for oats is to have 2% of something else in them.  If you aren’t Gluten Free having barley, rye, or wheat mixed in the oats isn’t a problem, but if you are, that 2% will make you sick. GM wanted to make Cheerios a safe product for someone with Celiac Disease to consume and they were not willing to release the product until they were 100% sure it was safe and that they could consistently make it safe. So in order to do this, their goal was to only have half of a non-oat grain in that pound and they are repeatedly meeting that standard or 9-12ppm (i.e. half of the 20ppm FDA standard). 


So why don’t they just use certified gluten free oats? Well there just simply aren’t enough gluten free oats in the world. If GM did use GF oats then there would be none left after about a week. This is why their process of sorting, milling in a dedicated gluten free facility, and transporting in gluten free containers is so key and why they test the oats, oat flour and finished Cheerios at various points during this process. 

So now let’s talk about how they taste! All Cheerios flavors have the same great taste that that I remember them having as a child. Even Jeremy, who eats Cheerios from time to time (he’s not gluten free, only by default when eating with me) says he can not taste a difference.


You’ve probably already seen the Yellow Box Gluten-Free Cheerios on store shelves. By mid-September you should be seeing all 5 flavors of gluten free Cheerios! So soon! Do not buy a box of Cheerios unless it has this seal on it! 


I have to say I am not only satisfied, but incredibly excited about what General Mills may have in store for us in the future.

I found them to be not as sweet, obviously, but I would love to get used to that.

I used the All Purpose Flour to make gluten free pancakes for breakfast over the weekend. I used this recipe with a few variations (no flax seeds, almond milk)

Gluten Free Friday Finds

After attending the Summer Fancy Food Show a few weeks ago I have tried so many new and delicious gluten free products. You might recall my posts at the beginning of the month where I shared with you some of the delicious products I sampled. Today I want to highlight a few more awesome Gluten Free Finds I think you all will love!


Umpqua Oats


Umpqua Oats was launched in 2008 by two moms craving a delicious and satisfying alternative to the typical instant oatmeal packets. Umpqua Oats super premium oatmeal is a satisfying, on-the-go breakfast choice for anyone who craves a healthy, delicious and quick meal. 


Umpqua Oats are available in 7 creative flavors. Each one comes in a convenient container that can be used as a bowl. It’s so easy to make. Simply add hot water, cover with lid, wait 3 minutes, stir and enjoy. How simple is that? It’s perfect if you need a quick breakfast as you are running out the door in the morning. 


What makes Umpqua Oats super premium? Well to start, the oats are the highest quality grade A, and only all natural nuts and fruits are used. Made with a combination of quinoa, millet, organic vegetables and coconut oil, it is 100% gluten free, soy free, corn free, dairy free, egg free, nut free, MSG free, and vegan. They make it so easy for those living with multiple food allergies to have a great tasting and nutrient dense burger.

QRUNCH burgers come in 4 flavors: Original, Spicy Italian, Green Chile, Curry with Lentils, and Saucy Buffalo. The Original is mild and nutty tasting. It has the subtle, nutty taste of quinoa (hence the Q in QRUNCH), the crunchiness of millet, and the goodness of organic vegetables. Because of its subtle flavor, pairs well with virtually anything you’d like on it. Jeremy prefered the texture of this burger over other veggie burgers I’ve bought in the past. Our only issue is that it fell apart really easily. This is not a big deal, as we simply just ate the burgers with a fork.

  • Toaster: Toast on high for one or two cycles until heated through. 
  • Toaster Oven or Oven: Bake at 400°F on a cookie sheet for 15 to 20 minutes.
  • Skillet or Grill: Cook on medium-high heat, 3 to 4 minutes per side.
  • Microwave: not recommend — you’ll lose that distinctive crunch. If you must, nuke on high for 1 to 2 minutes.

Modern Table Meals is a line of healthy, yummy, and easy to make pasta meal kits! The Van Cleve Seafood Co., founded and headquartered in Spotsylvania County, PA, now have its gourmet seafood products in 44 Whole Foods stores on the East Coast. The all-female, family-run business started in 2000 with one seafood shack on Courthouse Road. The Van Cleves have been featured on QVC for their crab pie and will appear again on the channel soon with new products: bacon-wrapped scallops and shrimp, both which are gluten free!

I don’t normally eat bacon, but the bacon-wrapped scallops and shrimp tasted very fresh and are perfect for serving at parties or small gatherings. 

Nocciolata from Rigoni di Asiago

Made with organic ingredients completely free of GMO’s, preservatives, colors, additives, or artificial sweeteners, Rigoni di Asiago’s Nocciolata combines hazelnuts, cocoa and cocoa butter, natural vanilla extract, raw sugar, and skimmed milk for a chocolate-hazelnut spread with undeniably superior flavor and smooth, creamy texture. Chobani Oats has been on the market for almost a year but I actually haven’t seen it any my local grocery stores, so when I was asked if I’d like to sample some of the flavors of course I said yes! [Update: Chobani has released two new flavors!] I love Chobani Greek Yogurt. I only eat the plain flavor, so I was a little worried the flavors would be too sweet for me, but, as Chobani is one of the only Greek yogurts I eat, I wanted to give them a try anyways! I could see the oats as soon as I opened my cup of yogurt.  They still had that wonderful chew that steel-cut oats have, and the flavors were really delicious, and not artificial tasting like many flavored yogurts.  


Chobani Oats is made with carefully selected gluten-free steel-cut oats. They’re husked and cut, then slow-cooked over low heat with ripe fruit, helping each one hold its shape and flavor. And, as if steel-cut oats weren’t enough, they’ve upped the whole grain game by adding quinoa, buckwheat, amaranth, and chia for a super hearty, super delicious breakfast. Every cup of Chobani Oats is filled with nutritious and unbelievably delicious authentic Chobani Greek yogurt. Because let’s face it — just oats and fruit would be boring!

Although I did find some of the flavors to be a little too sweet for me (with 16g of sugar, compared to 4g in their non-fat Plain Greek Yogurt I usually eat), it is a great source of energy and is healthier than eating a cookie or calorie heavy treat when you are craving something sweet!

I can’t believe this month is almost over!! I had so much fun trying new products and sharing them with you! Today I have another great product to share with you all – Bagelinos®!! (and one last giveaway tomorrow!!)


Bagelinos® is one of the best new products I have come across in a while. Partly because I haven’t eaten a bagel – or anything bagel-like – in a long long time, and also because they are just that good. Jeremy even gives them a two thumbs up.
