While a growing movement of consumers have prompted major manufacturers to remove artificial colors and flavors from their foods, it’s still a challenge to find naturally colored frostings or decorations in the baking aisle. What are artificial food dyes?  

Coloring agents such as FD & C Red No. 40 are petroleum-based, chemically produced dyes that were invented in the early 1900s. Little was known about the effect of synthetic food colors on our health, but with increased manufacturing production and grocery distribution, food companies found inventive new ways to market foods using artificial food coloring.

Through the years, concerns have been raised about the safety of artificial food dyes, mostly surrounding behavioral health disorders, allergic reactions, and carcinogenic properties.

  • Carcinogenic contaminants
  • Allergic reactions

The major concern is the effect artificial food colorings have on Attention-Deficit/Hyperactivity Disorder (ADHD). Even more severe health issues have been brought to light. According to the CSPI, the three most widely used dyes, Red 40, Yellow 5, and Yellow 6, are contaminated with known carcinogens. Red 3 has been a recognized carcinogen by the FDA for years, yet it is still allowed in foods.

Allergic reactions to artificial coloring are widely reported, from rashes and watering eyes to asthma.

More major players are sure to follow suit, proving the public has decided to advocate with their buying dollars and put their children’s health first.

Hearthy Organic Pumpkin Flour

Last week I posted about Hearthy Foods gluten free pies. Today, I want to talk about another product from Hearthy Foods. As you know I love pumpkin – pumpkin spiced lattes, pumpkin pancakes, pumpkin pie, pumpkin cookies, pumpkin curry, just to name a few. And I just learned of a fun new pumpkin product – Pumpkin flour! Until last week, I didn’t know pumpkin flour existed and I was very excited when Hearthy Foods sent me their pumpkin flour to try!

Gluten Free Sugar Cookies

Ingredients
  1. 1 cup sugar
  2. ½ cup butter, softened
  3. 1 large egg
  4. 1 tablespoon milk
  5. 1½ teaspoons vanilla
  6. ¼ teaspoon salt
  7. ¼ teaspoon ground cinnamon (optional)
  8. 2 cups gluten-free all-purpose flour + more for rolling/dusting
Instructions
  1. In a large bowl, cream the sugar and butter at medium speed.
  2. Add the egg, water, vanilla, salt, and cinnamon (if using). Blend until mixed well.
  3. Add the flour and mix at low speed until well combined.
  4. Cover and refrigerate for at least 1 hour and up to 24 hours.
  5. Preheat the oven to 350F. Line a baking sheet with parchment paper and set aside.
  6. Roll out the dough onto a lightly floured surface, about ¼-inch thick.
  7. Cut out the dough with selected cookie cutters, and place the cookies on the baking sheet. Make sure the cookies are not touching.
  8. Reform and roll out the scrap dough, then continue cutting more cookies.
  9. Bake for 10 to 12 minutes. Remove from the oven, and let the cookies cool for 5 minutes on the cookie sheet before removing them to a cooling rack. Cool completely before decorating.
  10. Store in an airtight container for up to 5 days.

These sugar cookies are fluffy, soft and sweet – you would never know they were gluten free. I brought them to my friends holiday party on Saturday night and everybody ate them. The best part is that nobody knew they were gluten free!  They are so good  and sweet enough – that you really don’t need frosting, but it does make for a fun addition!

Ingredients
  1. 1/4 brown sugar
  2. 1/2 teaspoon baking soda
  3. 1/4 teaspoon salt
  4. 2 tablespoons butter, at room temperature
  5. 2 teaspoons Boyajian coconut flavor (or 2 teaspoons vanilla extract)
  6. 1 large egg
  7. 2 cups JK Gourmet Almond Flour
  8. 1/2 cup chocolate chips
  9. 1/3 cup coconut flakes
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease a baking sheet, or line with parchment paper.
  2. Combine the sugar, baking soda, salt, and butter, and mix until smooth.
  3. Mix in the vanilla, egg, and almond flour, stirring to combine.
  4. Stir in the chocolate chips and coconut flakes.
  5. Scoop 1 tablespoon-sized balls onto the prepared baking sheet. Gently flatten to cookies to about 3/8-inch thick.
  6. Bake for 10-13 minutes, until golden brown.

I’ve been using Bob’s Red Mill’s gluten free products for years. I love their high quality products, and they never disappoint. I used Bob’s Red Mill Paleo Baking Flour to make my favorite banana pumpkin bread!  This bread is a bit more dense than most banana bread, because of the pumpkin, but it is really tasty, and it’s paleo! I like to add unsweetened coconut flakes to one of the two mini loaves I make, and I must say this makes it! The one with the coconut was less dense and more moist.

  3. 2 tablespoons butter
  4. 2 teaspoons vanilla extract
  5. 1 large egg
  6. 2 large bananas, mashed
  7. 1/8 cup applesauce
  8. 1/2 cup canned pumpkin
  9. 1/8 cup water
  10. 1 2/3 cups Bob's Red Mill Paleo Baking Flour
  11. 1 teaspoon baking soda
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon baking powder
  14. 1/4 teaspoon allspice
  15. 1/2 teaspoon nutmeg
  16. 1 teaspoon cinnamon
  17. 1/8 teaspoon ginger
  18. 1/2 cup unsweetened coconut flakes, chopped nuts and/or chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. With an electric mixer, in a large bowl, beat sugar and butter. Add in applesauce.
  3. Beat in eggs, water, banana, pumpkin, water and vanilla extract.
  4. In a separate bowl combine flour, and all remaining ingredients.
  5. Pour the dry mixture into the wet mixture and stir until smooth.
  6. Add in coconut flakes, nuts or chocolate chips.
  7. Pour batter into two greased, small loaf pans or one 9x5x3 pan and bake for 40-60 minutes.

Bella Gluten-Free Chocolate Chip Cookie Mix was the first mix I made. It starts with a 100% allergen-free All Purpose Baking Mix, creating the perfect texture. Mixed with dextrose-free chocolate chips and organic coconut sugar, a subtle sweetener like brown sugar, with a hint of caramel, make for a chewy on the edges and soft in the middle cookie. The mix makes about 18 cookies and didn’t last long in our apartment. Within days Jeremy and I had eaten them all! Time to go to the gym I guess…

The brownies were even better than the cookies! These chewy chocolate brownies are loaded with rich chocolate chips and cocao powder for delicious chocolately goodness. Whether you like them gooey (like me!) or classic cake-like you can have hot brownies in minutes. 

And tonight is Pizza Night! We are going to be making his (loaded with cheese) and her (dairy free, with tons of vegetables) pizzas! 

Here are a couple of tips that you may find useful for Bella Gluten Free Cups: 
 
Tip for your pizza: Use moistened fingertips to shape on sprayed parchment paper. I like crispy crust so I parbake for 7 minutes and then add my toppings, but you do not have to-it is delicious if you put it all together from the beginning!!
 
Tip for your biscuits and scones: freeze butter or butter substitute for 20 minutes or so and use a cheese grater to grate and disperse it throughout the mix before adding your wet ingredients.  Scones: use wet fingertips and form a circle with dough about 2 inches thick. Use a warm slightly wet knife to cut into 6-8 pie shape wedges, separate a little. They are not very sweet so if you plan on eating with jam or curd then great, if not add a bit of finishing sugar on top of each wedge. 
 
Tip for your multigrain rolls:  use ice cream scooper to get equal amounts and even baking (this is a great tip for the chocolate chip cookies too), place the scoops of bread dough into a sprayed muffin tin and let rise in warm place for 15 mins and then bake!  Also you can form a circle to make a Boule out of the dough and increase bake time to 25 minutes (or use thermometer to temp at around 190-200 degrees for done).

I had no idea they offered so many products – they also have soups, pizza crusts, and seasoned coating mixes – and I was thrilled to learn all about them last month. After the expo, Namaste sent me a few products to try out myself and I couldn’t wait to get baking! 

Namaste’s facility contains no wheat, gluten, corn, soy, potato, dairy, peanuts or tree nuts. It is their attempt to try to eliminate any chance of cross-contamination so you can enjoy Namaste Foods products worry-free. They do not use GMO ingredients in any product and all Namaste Food products are Kosher Certified. Aditionally, all products are made with only all-natural ingredients, no preservatives, and are vegan friendly.

Knowing gluten free products are expensive, Namaste has made an effort to make them more affordable for you. You will find that most Namaste Foods mixes have a significantly higher yield than other brands. For instance, all cake mixes make TWO rounds as opposed to one, making each purchase a better bang for your buck.

Namaste Foods knocks it out of the park again with their baking mixes! The taste, texture and consistency of the gluten free cookies were spot on. The cookie mix is so versatile, just like many of Namaste’s other mixes. On it’s own, this cookie will taste like your favorite sugar cookie, and also make delicious snicker doodle cookies (my favorite!). Or get creative and add dried apricots and macadamia nuts, chocolate chips or peanut butter chips, or any combination that pleases your palate! 

I also like that these cookies are not loaded with sugar. While most cookies have upwards of 20 grams of sugar per serving, Namaste’s gluten free cookie mix only has 9 grams.
