Today I am so excited to share with you the highly-anticipated addition to the Bob’s Red Mill paleo product line; Bob’s Red Mill Paleo Baking Flour!!

I’ve been using Bob’s Red Mill’s gluten free products for years. I love their high quality products, and they never disappoint. Did you know that Bob’s Red Mill has over 400 non-GMO products, many of which are also gluten free or certified organic. Bob’s Red Mill has a dedicated gluten free facility in Portland, Oregon where it mills, tests and packages its gluten free items to avoid any chance of cross contamination. 

The flour can be used to make pizza crusts, cakes, crackers, pancakes, flatbreads, cookies, and a variety of other baked foods. Alternately, it may be used in breadings for meats and vegetables. 

I used Bob’s Red Mill Paleo Baking Flour to make my favorite banana pumpkin bread!  This bread is a bit more dense than most banana bread, because of the pumpkin, but it is really tasty, and it’s paleo! I like to add unsweetened coconut flakes to one of the two mini loaves I make, and I must say this makes it! The one with the coconut was less dense and more moist.

Ingredients
  1. 1/3 cup brown sugar
  2. 1 Tablespoon white sugar
  3. 2 tablespoons butter
  4. 2 teaspoons vanilla extract
  5. 1 large egg
  6. 2 large bananas, mashed
  7. 1/8 cup applesauce
  8. 1/2 cup canned pumpkin
  9. 1/8 cup water
  10. 1 2/3 cups Bob's Red Mill Paleo Baking Flour
  11. 1 teaspoon baking soda
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon baking powder
  14. 1/4 teaspoon allspice
  15. 1/2 teaspoon nutmeg
  16. 1 teaspoon cinnamon
  17. 1/8 teaspoon ginger
  18. 1/2 cup unsweetened coconut flakes, chopped nuts and/or chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. With an electric mixer, in a large bowl, beat sugar and butter. Add in applesauce.
  3. Beat in eggs, water, banana, pumpkin, water and vanilla extract.
  4. In a separate bowl combine flour, and all remaining ingredients.
  5. Pour the dry mixture into the wet mixture and stir until smooth.
  6. Add in coconut flakes, nuts or chocolate chips.
  7. Pour batter into two greased, small loaf pans or one 9x5x3 pan and bake for 40-60 minutes.

  2. I love Bob’s Red Mill flour and I have the catalog at home, too. I don’t recall seeing this flour, but wowie, I’d love to try it!!! I would want to try it for a pizza crust, and scones first!

  4. Oh my, this looks wonderful! I can’t eat potato flour/starch and so many gluten free blends have that included. I would love to give this a try and the recipe looks so delicious.

  5. Cranberry blueberry muffins would be a nice morning snack with this new flour.
