JELL-O Instant Pudding Gluten Free & Dairy Free

Finding an alternative for milk in instant pudding would seem like an easy thing to do right? Wrong. Soy milk does not work, and trying to replace 2 cups of milk with 2 cups of almond milk leaves you with a watery liquid concoction that doesn’t even remotely resemble pudding. Today I tried again, this time using only 1 cup of almond milk. It was a little thick so I slowly added a little more and it came out great! The taste and consistency was just the same as I remember when I ate pudding as a kid.


1 packet Jello Instant pudding mix

1 cup unsweetened almond milk, plus more as desired* (You can also use a little water too)

* I used 1 cup and 2 tablespoons milk and 2 tablespoons water.

  1. I am allergic to nuts and cannot use almond milk. Can I use rice milk? Or anything else with jello instant pudding mix?

      I don’t think rice milk will turn out right. Can you drink soy milk?Soy milk will work if you heat it up first. good luck and let me know how it turns out!

    2. Lisa. I’ve had great luck with coconut milk. Use the tinned stuff from the Asian foods section in the grocery store. I love the way it tastes with chocolate pudding! :)

    3. Unfortunately, I tried rice dream (rice milk) and it does not work. I am not trying coconut milk, but I think it will be unsuccessful too.

    4. Hi, I know these comments are old, but after reading that you can’t make pudding with rice milk – I decided to still give it a shot. I tried two versions. Jello Instant chocolate pudding mix with only 1 c. vanilla rice milk and that came out okay. Not perfect but edible. (next time I will add more cocoa powder and some fleishmans and vanilla for flavor.) The better version was the cook and serve, but with a twist. I used the Jello chocolate fudge (which has carrageenan in it -carrageenan is a somewhat controversial additive derived from red seaweed that helps food bind) and 1 c. of vanilla rice milk. 1/4 c. enjoy life chocolate chunks (soy, nut, and dairy free) and 1 tbsp. fleishman’s. This added the fat back and my friend with the soy nut and dairy allergy can still have fleishmans butter. This one came out a bit thick but was the favorite of the kids and adults. : )

    5. Yes! Use full fat canned coconut milk with instant
      Pudding mix and it is heaven!!! Cup for cup, same as milk.

    My family is lactose intolerant, so I wanted to use almond milk, but I forgot that I only have chocolate almond milk on hand right now.

    Do you know if this would work with 1 cup or so of chocolate almond milk?

    Would it make the chocolate flavor even richer or just mess up the taste entirely?

    If not, may I just try it with Silk’s PureAlmond Milk or would only Trader Joe’s almond milk work? I think those two have different consistencies from what I recall.

    1. Hi! I have not tried it with chocolate milk, but I am sure it would taste great – and extra chocolatey. I used Unsweetened Almond Breeze Almond Milk, which is not as thick as Silk or Trader Joe’s (this one is the thickest). If you do use a thicker milk I would suggest starting with only 3/4 cup and adding more as needed. You could also add a little water too, to help with the consistency. Good luck, and let me know what you end up doing and how it turns out!

        Thanks for the tip! I am planning to make Oreo dirt cups, and I’m nervous the chocolatey-ness may be overwhelming (what with the Oreo crumbs and I was planning to add Rolos and maybe Crunch bits). 😛

          I started out with 3/4 cups of chocolate almond milk, but it was too thick, so I added 1/2 cup and then another 1/2 cup, which I think was a liiittle too much because it was slightly liquidy (I haven’t had pudding in awhile, I forgot what the consistency was).

          Overall, I think it turned out great. I added in cool whip and some oreo crumbs, before topping the whole deal with oreo crumbs.

          Next time, I’ll probably try 1 and 1/2 cups or 1 and 1/4 cups and see how it turns out.

    2. Just use another packet of instant pudding and it will work with Almond milk. You can also just half the amount of Almond milk with just 1 instant pudding mix.

  3. I concur that the canned cocconut milk from the Asian food aisle in the grocery store works fabulous. I use one can of reg and one can of light mixed together, then I measure out close to 2 cups to use with one box and refrig the remainder to use in another box of pudding later in the week. It is not quite a total of 4 cups of liquid so I just add a little bit of water or almond milk. And yes, as previous poster said it is soooooo good in chocolate pudding, but I love it in all flavors.

    1. Hi – I don’ think all are, you should read the ingredients to see if the flavor you want is DF or not.

  4. Snack Pack brand lemon meringue flavor is dairy free and gluten free. It is already prepared in Plastic cups so you won’t be able to make a homemade dessert. It’s a great quick snack and yummy!

  5. I blended 2 bananas with 2 cups of water and used that instead of milk (I was making banana nilla wafer pudding, so I wanted the banana flavor). It worked great! My husband and I live in Korea and can’t get almond milk easily, so we often use blended bananas instead of milk in cereal and or cookies and stuff. I was so happy to see it worked here too!

  6. What I used lactaid or another lactose free milk? Do you think it work just as well? I’m new to the lactose intolerance world and I figured you folks know waaaaaay more than I do.

    1. It worked great with almond milk and soy. I’m not sure about lactaid, I haven’t used it before.

    2. Richard – I have used lactose Free milk to make jello pudding for a long time now and it works fine if you use the 2% lactose free milk.

  7. This is how I make it. I do cut milk amounts in half also. Half rice milk and then add the cream layer of coconut milk to equals remaking milk amount. Comes out very thick. Sometimes I will add a extra 1/4 cup of rice milk to thin it a bit. No coconut taste either.

  8. Thank you for this suggestion. I am making my hubby some pistachio pudding ice cream! He is gluten and dairy free so it is difficult to find deserts that taste good and fulfill his craving. I will let you know how the ice cream sets up!

  9. AFAIK any non-dairy milk will work with Jell-O pudding as long as you heat it first, since cornstarch is still one of the main ingredients. The “cold” thickeners, disodium phosphate and tetrasodium pyrophosphate, bind to casein and calcium, so if your milk is calcium-fortified, you can probably add casein (easy enough to get since it’s a popular bodybuilding supplement) and get the right consistency. But again if you heat the milk you can just use a from-scratch recipe, and skip the artificial dyes and preservatives.

  10. I made gluten & dairy free vanilla pudding with almond milk and it turned out good. I cooked it & skipped the processed box jello pudding mix altogether! Try it – it’s quick, easy & healthier

  11. Add 2 tsp corn starch to the pudding mix and mix thoroughly prior to adding almond milk and it will thicken right up.

  12. I use coconut milk and it turns out great – and tastes even better! I use 1.5 cups of very cold coconut milk to start, adding more if needed.

    1. Hi Peggy, I haven’t tried but I’m assuming it can be. I would start off using less milk than the recipe calls for and add more if needed.

    1. Angela, be careful, not ALL varieties are dairy free. There is a great app that allows you to scan it and immediately it will tell you if it is safe or not. It is called content checked.

  18. I used the 2 cups of Almond Milk not realizing that the comsistancy would be different from milk. If I left it in the fridge and then tried to add more pudding mix tomorrow to thicken do you think it would work?

  19. I know these comments are really old, but my son has a Milk allergy (milk protein), so I tried instant mix with almond milk…not impressed. After searching for recipes I came across an excellent chocolate pudding recipe on Silk’s website.

  20. Lactaid works perfectly with instant puddings. But Lactaid doesn’t cook well. Go for the others when baking or cooking pudding. Note that when using soy or almond milk for cooked puddings, use less sugar if you are making from scratch, and the vanilla pudding will be a less-attractive yellow color.

  21. So, I am currently letting my pudding set! I used cashew milk with one and soy milk with the other. they have only been in the fridge for 20 minutes and already pretty firm! I heated each type of milk on the stove for about 5-8 minutes. (until it started a rolling boil) moved the hot liquid to the dish i was using to prepare the pudding. i quickly whisked each dried pudding packet and put it in the fridge. Casein is a milk derivative. you should not find it in any nut, rice or soy milks. However, be wary of those specifically labeled “lactose free” because some of them still contain milk derivatives.

  22. FIRST, I add 1/2 to 1 teaspoon of xanthan gum to a small box (4 serving size) Jello Instant Pudding powder – mixing it so the xanthan is well blended with the other dry ingredients. Xanthan gum is one of the ingredients in Jello Pudding anyway. THEN, I stir in 2 full cups of my favorite non-dairy milk substitute (almond, or cashew, or soy, but I usually use a blend of two of these beverages depending on which I have on hand). I have yet to experiment to see if using corn starch would thicken the pudding.

    Years ago I tried the Jello Pudding with half the amount of liquid and just about gagged on the sugar ratio – I threw the pudding out. Sugar is the FIRST ingredient in Jello instant Pudding. After reading articles on sugar contributing to plaque buildup in blood vessel and how this can contribute to stroke and dementia I prefer NOT to double up on the sugar. And I will NOT buy puddings that contain Aspartame or artificial sweeteners. One of my sisters was diagnosed with Aspartame poisoning!

  24. My name is tamara cooper and i live in prattville. Al. And i have Galactosemia. Plus. I have diabetes. And it is hard for me! Just seeing. This. Recipe. Of the pudding. Looks so good. But the sugar. I can’t. Have can i replace it with splenda?

  25. Can you buy the sugar free pudding? Also the best consistency I have found is imperial dragon coconut milk in the can. They carry this brand at walmart. It’s in a blue can. It doesn’t separate and it’s so creamy! Just shake the can well and add the milk to pudding as the recipe calls for it. I mix mine in a mason jar and shake really good. It sets really fast in the fridge.

  26. Yes, Jello makes sugar free puddings, but they contain other ingredients you might not want to put into your body. You can make pudding from scratch. There are recipes on the Internet. In your favorite search engine type something like:
    – homemade gluten-free sugar-free pudding recipe
    – sugar-free pudding recipe from scratch
    Use your imagination to find different ways to word what you are looking for and you will eventually get results for what you want.

  27. Xanthan gum, corn starch anything like this added slowly will thicken it up, whether it’s rice milk or cashew milk!

  28. Hi – I’m trying to convert an old Monkey Bread recipe to dairy free. The only thing I’m stuck on is the small package of Jello Butterscotch Pudding Cook & Serve. I need it dry to sprinkle over the top of the rolls. There are tons of recipes for the fully made pudding, but how to I duplicate the powder that comes in the box? Any ideas?
