I recently experimented with baking with this flour for the first time. I love chocolate chip cookies and this recipe was hit! I served the cookies to our friends who were over during the Patriots game last night and by the end of the night all of the cookies were gone! 

Tiger Nut Chocolate Chip Almond Butter Cookies

  1. 1/2 cup Tiger Nut flour
  2. 1 large egg
  3. 2 tablespoons brown sugar
  4. 1/2 cup chocolate chips
  5. 1/4 cup honey
  6. 1 cup almond butter
  7. 1 teaspoon vanilla extract
  8. 1/2 teaspoon baking soda
  9. 1/4 teaspoon sea salt
Instructions
  1. Preheat the oven to 350F
  2. Combine all ingredients in a bowl and mix thoroughly.
  3. Scoop tablespoon sized balls onto a baking sheet and flatten with the back of a spoon
  4. Bake for 10 minutes, or until the cookies start to brown
  5. Cool for 5 minutes before serving

Gluten Free Sugar Cookies

Ingredients
  1. 1 cup sugar
  2. ½ cup butter, softened
  3. 1 large egg
  4. 1 tablespoon milk
  5. 1½ teaspoons vanilla
  6. ¼ teaspoon salt
  7. ¼ teaspoon ground cinnamon (optional)
  8. 2 cups gluten-free all-purpose flour + more for rolling/dusting
Instructions
  1. In a large bowl, cream the sugar and butter at medium speed.
  2. Add the egg, water, vanilla, salt, and cinnamon (if using). Blend until mixed well.
  3. Add the flour and mix at low speed until well combined.
  4. Cover and refrigerate for at least 1 hour and up to 24 hours.
  5. Preheat the oven to 350F. Line a baking sheet with parchment paper and set aside.
  6. Roll out the dough onto a lightly floured surface, about ¼-inch thick.
  7. Cut out the dough with selected cookie cutters, and place the cookies on the baking sheet. Make sure the cookies are not touching.
  8. Reform and roll out the scrap dough, then continue cutting more cookies.
  9. Bake for 10 to 12 minutes. Remove from the oven, and let the cookies cool for 5 minutes on the cookie sheet before removing them to a cooling rack. Cool completely before decorating.
  10. Store in an airtight container for up to 5 days.

These sugar cookies are fluffy, soft and sweet – you would never know they were gluten free. I brought them to my friends holiday party on Saturday night and everybody ate them. The best part is that nobody knew they were gluten free!  They are so good  and sweet enough – that you really don’t need frosting, but it does make for a fun addition!

Ingredients
  1. 3 cups almond flour
  2. 1/2 cup butter, room temperature, or coconut oil
  3. 1/2 cup sugar (I used a little less)
  4. 2 eggs
  5. 1/2 teaspoon salt
  6. 2 teaspoons vanilla extract
  7. 1/2 teaspoon baking soda
  8. 3/4 cups chocolate chips
Instructions
  1. Preheat oven to 360 degrees F.
  2. In a large bowl, cream together the butter and sugar.
  3. Add the eggs to the butter mixture.
  4. Add the almond flour, salt, vanilla and baking soda and mix well.
  5. Add in the chocolate chips and fold them into the batter.
  6. Roll the dough into 1-inch balls and press them down gently onto a non-stick baking surface.
  7. Bake for 12-15 minutes until the cookies rise and the edges have browned.
  8. Remove the cookies from the oven and let them cool before eating.
Notes
  1. To make this vegan substitute the egg with flax seeds or your favorite egg replacer.

You should store almond flour in the refrigerator to preserve freshness and extend its shelf life. It will keep for up to 12 months if stored properly.

Nut flours burn easily, so most of recipes will call for a lower baking temperature and longer time than you would use with a normal wheat flour recipe. Keep a close eye on your baked goods though, because all ovens heat differently and I’ve definitely burnt cookies a few times, including the first batch of cookies I made yesterday!

Morning Pep Almond flour comes in two sizes: 2 lb. and 5 lb. bags. Both are available on Amazon. Five pounds might seem like a lot but if you use it often enough it is well worth spending $40 on this size. In the end that is only $8 per pound, a price you will not find at any grocery store.

Krusteaz Gluten Free Mixes, Pumpkin Swirl Brownies & Giveaway

Partnering with awesome brands is one of the fun perks of having a blog, and I was super excited when Krusteaz reached out to me about participating in a Gluten Free Bake-Off!

This fall Krusteaz, maker of premium baking, pancake and waffle mixes, introduced its first line of gluten free products. Available at most grocery chains nationwide, each of the four new baking mixes deliver big on flavor without the gluten. From moist and flavorful pancakes and blueberry muffins to subtly sweet cornbread and delectable brownies, there are mouthwatering options for everyone at the table!

All the mixes require the addition of water, oil, and/or eggs. The Blueberry Muffin mix comes with a can of real wild blueberries; it is the ONLY gluten free blueberry mix on the market like this.

All Krusteaz products bear the Whole Grains Council’s Whole Grain Stamp, which guarantees a half of serving of whole grains per serving. The mixes are made with a combination of whole grain sorghum flour, whole grain millet flour, and/or brown rice flour.

The Bake-Off requires us to create a recipe using one of the mixes. I had a few recipe ideas in mind but ultimately chose one made with one featuring of my favorite fall foods: pumpkin.  I love anything with pumpkin; pumpkin lattes, pumpkin granola, pumpkin pancakes, pumpkin bread, pumpkin hummus, pumpkin chili, roasted pumpkin, pumpkin ice cream….I think you get the idea. So I decided to make Pumpkin Swirl Brownies, and I do have to say, this is one of the best recipes I’ve come up with yet!

These brownies were delicious! I have to say these are some of the best gluten-free brownies I’ve had. I have tried many gluten free boxed brownie mixes over the past few years, and some really don’t quite cut it. These tasted like the real deal. Jeremy even raved about them. The only downside is the amount of sugar. These brownies are sweet— and addicting— and personally I would like to see these made with a little less sugar.

Pumpkin Swirl Brownies

Servings: 20
Prep Time: 15 minutes
Cook Time: 50-55 minutes

For the Brownies:

For the Pumpkin Swirl:

  • ¼ cup cream cheese
  • 1 cup canned pumpkin
  • 2 tablespoons almond or soy milk
  • 2 tablespoons coconut sugar
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon nutmeg

Instructions:

  1. Preheat oven to 325F. Lightly grease a 11×7-inch baking pan.
  2. Stir together all the ingredients for the brownies, except for the coconut flakes
  3. In a separate bowl, stir together all the ingredients for the pumpkin swirl
  4. Pour 2/3 of the brownie mix into the greased baking pan and spread evenly
  5. Pour the entire pumpkin swirl mix over the brownie mix and spread evenly
  6. Top with the remaining brownie mix and spread easily
  7. Sprinkle with coconut flakes.
  8. Bake for 50 minutes or until a toothpick placed in the center comes out clean
  9. Cool completely in pan before cutting.

The advantage of mixes is that most of the prep work is already done for you. All the dry ingredients are already mixed together in a box. And all you need to do is add in a few wet ingredients and stir. The disadvantage is you can’t control what’s already in the mix. With 20 grams of sugar per serving, I wish there was just a little less sugar.

Prep Time: 10 minutes
Cook Time: 14-16 minutes

Instructions:

  1. Preheat oven to 400F. Lightly grease pan or line muffin pan with paper or silicon baking cups.
  2. Drain and rinse blueberries in cold water; set aside.
  3. Stir together water, purée, oil, eggs and muffin mix until well combined.
  4. Gently fold drained blueberries into the batter.
  5. Fill muffin cups 2/3 full.
  6. Top with sliced or chopped almonds.
  7. Bake for 14-16 minutes or until light golden brown around edges. Cool 5 minutes before removing from pan.

JELL-O Instant Pudding Gluten Free & Dairy Free

Finding an alternative for milk in instant pudding would seem like an easy thing to do right? Wrong. Soy milk does not work, and trying to replace 2 cups of milk with 2 cups of almond milk leaves you with a watery liquid concoction that doesn’t even remotely resemble pudding. Today I tried again, this time using only 1 cup of almond milk. It was a little thick so I slowly added a little more and it came out great! The taste and consistency was just the same as I remember when I ate pudding as a kid.

Recipe:

1 packet Jello Instant pudding mix

1 cup unsweetened almond milk, plus more as desired* (You can also use a little water too)

* I used 1 cup and 2 tablespoons milk and 2 tablespoons water.

Gluten Free Raspberry Brownies

Ingredients:
1 1/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
3 tablespoons butter, melted
3 tablespoons nonfat Greek yogurt
4 ounces unsweetened baking chocolate
2 large eggs
2 tablespoons water
2 teaspoons vanilla extract
1 tablespoons raspberry extract
1/2 cup chopped nuts (optional)

1. Preheat Oven to 350F. Grease a 13 x 9 inch baking pan
2. In a small bowl, combine the flour, baking soda and salt.
3. In a large bowl, mix sugar, butter, yogurt, chocolate, eggs, water, vanilla and raspberry extract until smooth.
4. Add the dry ingredients to the wet ingredients. Mix well.
5. Add in nuts or chocolate chips (optional).
6. Pour batter into prepared baking pan.
7. Bake for 18 to 22 minutes, or until wooden toothpick comes out slightly sticky.
8. Cool for five minutes then remove from pan. Cool completely before cutting.
