premium organic tiger nut flour

If you are looking for flour that’s Gluten Free, Organic, NUT FREE, Non Allergenic, Non-GMO then you have just found it!

Premium Organic Tiger Nuts Flour is milled from fine Raw Premium Organic Tiger Nuts and bakes 1-1 just like ordinary Flour. What’s so great about this flour, is that because it is ground so fine, you can use it as a smoothie mix too. Just put a few spoonfuls with fresh fruit or vegetables, together with some ice and a little water and throwing it all in a blender for terrific smoothies.

So you might be a little confused right now. Tiger Nuts are actually NOT nuts, they are a tuber that grows below the ground’s surface. They have all of the nutrients and energy benefits of nuts and then some, but without the stuff that can adversely affect allergies. hey are packed with fiber, vitamins and nutrients, and deliver a serious dose of energy. And because they have so much fiber, they make you feel full, which of course helps curb your appetite.

I recently experimented with baking with this flour for the first time. I love chocolate chip cookies and this recipe was hit! I served the cookies to our friends who were over during the Patriots game last night and by the end of the night all of the cookies were gone!

These sugar cookies are fluffy, soft and sweet – you would never know they were gluten free. I brought them to my friends holiday party on Saturday night and everybody ate them. The best part is that nobody knew they were gluten free!  They are so good  and sweet enough – that you really don’t need frosting, but it does make for a fun addition!

You should store almond flour in the refrigerator to preserve freshness and extend its shelf life. It will keep for up to 12 months if stored properly.

Nut flours burn easily, so most of recipes will call for a lower baking temperature and longer time than you would use with a normal wheat flour recipe. Keep a close eye on your baked goods though, because all ovens heat differently and I’ve definitely burnt cookies a few times, including the first batch of cookies I made yesterday!

Morning Pep Almond flour comes in two sizes: 2 lb. and 5 lb. bags. Both are available on Amazon. Five pounds might seem like a lot but if you use it often enough it is well worth spending $40 on this size. In the end that is only $8 per pound, a price you will not find at any grocery store.

Now for the giveaway! One lucky reader will win a 2 lb. bag of Morning Pep Almond Flour!

Jiva USDA Organic White Rice Flour Review & Pumpkin Chocolate Chip Cookies Recipe

Jiva USDA Organic White Rice Flour is from quality, organic Rice. Organic white rice flour is a favorite ingredient for gluten free baking, lending a light and delicate sponginess to baked goods. It is also great for breading and thickening soup, sauce, or gravies.

The refined version of organic brown rice flour, organic white rice flour can be used interchangeably with brown rice flour. The second largest world crop, rice is a staple food in Asia where, unlike most grains, it is grown on small paddies and harvested by hand, just as it has been for centuries.

It is lighter, milder, and easier to digest than wheat flour. Some people find white rice flour to be slightly gritty, but many, including myself, find it preferable to bean flours.

White rice flour is naturally gluten free, rich in carbohydrates and low in fat. Jiva Organics Rice Flour is also USDA certified organic.

White rice flour can be used to bake cakes, cookies, dumplings, breads and more, as well as thicken sauces and coat fish and other proteins. It is also very popular for the preparation of a variety of Asian noodles, which are a staple in Eastern cuisine.

Pumpkin Pop-Pie Recipe for Thanksgiving #snacksmall #popchips

If you’re like me, then you are trying to be extra healthy right about now, preparing for the upcoming holidays, parties, and feasts. But if you enjoy sweets, staying on track can be hard. If you want something sweet, but still healthy, then check out this easy and fun snack made with popchips!

Here is a simple recipe for The Pumpkin Pop-Pie, and a delicious twist on pumpkin pie, made with popchips, that will make them irresistible! This guilt free snack will satisfy your cravings, without ruining your diet.

1 sea salt popchip + 1 scoop of pumpkin pie filling + a little whipped cream = the delightful little Pumpkin Pop-Pie,

It’s fun for kids to make too, and they will also enjoy the light, crunchy texture as much as you will! Or serve it up on Thanksgiving in place of pumpkin pie!

In case you haven’t had the chance to try popchips yet, here’s a little more about this healthy alternative to potato chips! popchips, a delicious popped chip, are nothing like your typical potato chips. popchips have all the delicious flavor but only half the fat of fried chips. Popchips are not fried nor baked, instead they are popped using heat and pressure, which helps retain flavor and keep out the grease. You’ll never have to worry about greasy hands or too much salt!

Popchips have no artifical colors, preservatives, or flavors, and very little sodium in each chip. Popchips are not only gluten free, but they are also soy free, nut free, and certified Kosher. The only flavors that contain dairy are cheddar potato, katy’s kettle corn, and ranch and nacho cheese tortilla. These allergens are marked on the ingredient section of each bag. popchips are 100% vegetarian and a few flavors are vegan.

popchips are available at Target, Whole Foods, grocery stores nationwide, and on Amazon.

Krusteaz Gluten Free Mixes, Pumpkin Swirl Brownies & Giveaway

Screen Shot 2014-11-06 at 8.06.57 PM

Partnering with awesome brands is one of the fun perks of having a blog, and I was super excited when Krusteaz reached out to me about participating in a Gluten Free Bake-Off!

This fall Krusteaz, maker of premium baking, pancake and waffle mixes, introduced its first line of gluten free products. Available at most grocery chains nationwide, each of the four new baking mixes deliver big on flavor without the gluten. From moist and flavorful pancakes and blueberry muffins to subtly sweet cornbread and delectable brownies, there are mouthwatering options for everyone at the table!

Screen Shot 2014-11-06 at 8.50.34 PM

All the mixes require the addition of water, oil, and/or eggs. The Blueberry Muffin mix comes with a can of real wild blueberries; it is the ONLY gluten free blueberry mix on the market like this.

All Krusteaz products bear the Whole Grains Council’s Whole Grain Stamp, which guarantees a half of serving of whole grains per serving. The mixes are made with a combination of whole grain sorghum flour, whole grain millet flour, and/or brown rice flour.

The Bake-Off requires us to create a recipe using one of the mixes. I had a few recipe ideas in mind but ultimately chose one made with one featuring of my favorite fall foods: pumpkin.  I love anything with pumpkin; pumpkin lattes, pumpkin granola, pumpkin pancakes, pumpkin bread, pumpkin hummus, pumpkin chili, roasted pumpkin, pumpkin ice cream….I think you get the idea. So I decided to make Pumpkin Swirl Brownies, and I do have to say, this is one of the best recipes I’ve come up with yet!

These brownies were delicious! I have to say these are some of the best gluten-free brownies I’ve had. I have tried many gluten free boxed brownie mixes over the past few years, and some really don’t quite cut it. These tasted like the real deal. Jeremy even raved about them. The only downside is the amount of sugar. These brownies are sweet— and addicting— and personally I would like to see these made with a little less sugar.

Pumpkin Swirl Brownies

Servings: 20
Prep Time: 15 minutes
Cook Time: 50-55 minutes

For the Brownies:

For the Pumpkin Swirl:

  • ¼ cup cream cheese
  • 1 cup canned pumpkin
  • 2 tablespoons almond or soy milk
  • 2 tablespoons coconut sugar
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon nutmeg

  1. Preheat oven to 325F. Lightly grease a 11×7-inch baking pan.
  2. Stir together all the ingredients for the brownies, except for the coconut flakes
  3. In a separate bowl, stir together all the ingredients for the pumpkin swirl
  4. Pour 2/3 of the brownie mix into the greased baking pan and spread evenly
  5. Pour the entire pumpkin swirl mix over the brownie mix and spread evenly
  6. Top with the remaining brownie mix and spread easily
  7. Sprinkle with coconut flakes.
  8. Bake for 50 minutes or until a toothpick placed in the center comes out clean
  9. Cool completely in pan before cutting.

The advantage of mixes is that most of the prep work is already done for you. All the dry ingredients are already mixed together in a box. And all you need to do is add in a few wet ingredients and stir. The disadvantage is you can’t control what’s already in the mix. With 20 grams of sugar per serving, I wish there was just a little less sugar.

Krusteaz Gluten Free mixes retail for around $4.49, which is in the middle-lower price range for gluten free mixes, and can be found at grocery stores throughout the country or on

Now it’s time for the giveaway!! Krusteaz is also going to give one lucky reader the chance to win a Krusteaz Prize Pack that includes a Krusteaz Tote, two packages each of the gluten free mixes, and a Krusteaz spatula! To enter, simply click on the rafflecopter below.

Bonus Recipe:

Blueberry Carrot Muffins

Prep Time: 10 minutes
Cook Time: 14-16 minutes

  1. Preheat oven to 400F. Lightly grease pan or line muffin pan with paper or silicon baking cups.
  2. Drain and rinse blueberries in cold water; set aside.
  3. Stir together water, purée, oil, eggs and muffin mix until well combined.
  4. Gently fold drained blueberries into the batter.
  5. Fill muffin cups 2/3 full.

Celebrating Pamela’s 26 Years in Gluten Free // GIVEAWAY

Screen Shot 2014-08-20 at 9.14.50 AM

This year, Pamela’s is proud to celebrate 26 years in gluten free. With the #1 selling Baking & Pancake Mix and top-selling Chunky Chocolate Chip Cookie, Pamela’s products have proven that gluten-free can be delicious. Pamela’s entire line of baking mixes, cookies, fig bars, and snack bars are power-sellers, extending beyond the allergy-free marketplace.

Pamela’s recently sent me their All-Purpose Artisan Flour Blend, which is a gluten free, wheat free, dairy free, nut free, corn free, and soy free flour blend that works as a cup for cup flour replacement in most recipes.

Screen Shot 2014-08-20 at 9.17.32 AMIMG_9090

I also tried the new Figgies & Jammies, which are Pamela’s gluten free, wheat free, and egg free version of traditional fig bar cookies. Pamela’s Figgies & Jammies are the first nationally launched gluten free fig bar cookies on the market! Figgies & Jammies are similar to Fig Newtons and are available in four flavors: Blueberry & Fig, Mission Fig, Raspberry & Fig, and Strawberry & Fig.

If you liked Fig Newton’s then you MUST try Pamela’s Figgies & Jammies. I think these are even BETTER than the traditional ones. The strawberry flavor was my favorite; even Jeremy enjoyed them so much that I had to hide the rest from him!

One of Pamela’s top sellers are their Whenever Bars, a gluten free, non-dairy snack bar made with gluten free oats, chia seeds, and lightly sweetened with agave and sugar, Whenever Bars offer a healthy, great tasting snack whenever you want one. The only downside is 8-10g of sugar per bar, I try to stick to 6g or less per serving. But, this is much better than most bars out there on the market with 15 grams or more of sugar per serving.

Whenever bars come in four flavors: Oat Blueberry Lemon, Oat Chocolate Chip Coconut, Oat Cranberry Almond, and Oat Raisin Walnut Spice.

The Oat Chocolate Chip Coconut was delicious and is not overly sweet, so it can be enjoyed in the morning, afternoon, or evening.IMG_9063

Pamela uses only premium ingredients, locally sourced when possible. She personally develops all product recipes and chooses the ingredients carefully, ensuring that her products are free of artificial additives, high fructose corn syrup, and free of hydrogenated oils and trans fats. They have statements from all their suppliers that to the best of their knowledge, their ingredient is free of GMOs, and Pamela’s randomly performs 3rd party testing on products to ensure they are GMO-free. They have also officially joined the Non-GMO Project where several of their products are undergoing the extensive verification process.IMG_9060

Pamela’s Products are sold at Whole Foods and health food stores. To find a retail location nearest you, check out their Store Finder.

The folks over at Pamela’s were kind enough to offer one of my lucky readers a chance to win a tote bag, recipe booklet and Pamela’s products! To enter the giveaway simply click on the rafflecopter below!

JELL-O Instant Pudding Gluten Free & Dairy Free

Finding an alternative for milk in instant pudding would seem like an easy thing to do right? Wrong. Soy milk does not work, and trying to replace 2 cups of milk with 2 cups of almond milk leaves you with a watery liquid concoction that doesn’t even remotely resemble pudding. Today I tried again, this time using only 1 cup of almond milk. It was a little thick so I slowly added a little more and it came out great! The taste and consistency was just the same as I remember when I ate pudding as a kid.

1 packet Jello Instant pudding mix

1 cup unsweetened almond milk, plus more as desired* (You can also use a little water too)

* I used 1 cup and 2 tablespoons milk and 2 tablespoons water.
